Step-by-Step Instructions

  1. 1.Prepare the Poha

    Place 1.5 cups of poha (flattened rice) into a glass bowl. Add enough water to cover the poha and let it soak for 3-5 minutes until softened. Drain the water completely, ensuring no excess moisture remains.

    To the softened and drained poha, add 3 tablespoons of besan (gram flour), 0.5 teaspoon of red chili powder, 0.5 teaspoon of cumin powder, 0.5 teaspoon of coriander powder, 2 chopped green chilies, 0.5 teaspoon of salt, 0.5 medium finely chopped onion, and 2 tablespoons of chopped fresh coriander leaves.

    Mix all the ingredients thoroughly by hand until a cohesive dough-like mixture is formed. Ensure everything is well combined.

    Take small portions of the mixture and shape them into round, flattened patties (cutlets or tikkis). Aim for about 10-12 cutlets of similar size.

  5. 5.Shallow Fry the Cutlets

    Heat oil for shallow frying in a pan over medium heat. Once the oil is hot, carefully place the shaped cutlets into the pan, ensuring not to overcrowd it. Fry for 3-4 minutes on each side, or until they turn golden brown and crispy.

  6. 6.Serve

    Remove the fried cutlets from the pan and place them on a paper towel to absorb any excess oil. Serve hot with your favorite chutney or sauce.
