  • 2 tbspOil
  • 3 medium, finely choppedOnion
  • 1 tbspGinger garlic paste
  • 1, choppedGreen chilli

  • 1/2 tspKashmiri Chilli Powder
  • 1/2 tspCoriander powder
  • 1/2 tspGaram masala powder
  • 1/2 tspPepper powder
  • 1/4 tspTurmeric powder
  • to tasteSalt

For Assembly

  • 3, cut in halfBoiled egg
  • 6Puff pastry sheets
  • 1 egg yolk + 1 tbsp milk (optional)Egg wash

Step-by-Step Instructions

  1. 1.Prepare the Onion Filling

    Heat 2 tablespoons of oil in a pan. Add the finely chopped onions and sauté until they turn translucent, about 3-4 minutes.

  2. 2.Add Aromatics and Spices

    Add 1 tablespoon of ginger garlic paste, 1 chopped green chilli, and a few curry leaves to the pan. Continue to sauté until the onions turn golden brown, about 5-7 minutes.

  3. 3.Season the Filling

    Stir in 1/2 teaspoon of Kashmiri Chilli Powder, 1/2 teaspoon of coriander powder, 1/2 teaspoon of garam masala powder, 1/2 teaspoon of pepper powder, 1/4 teaspoon of turmeric powder, and salt to taste. Mix all the spices well with the onion mixture and cook for 2-3 minutes until fragrant and well combined.

  4. 4.Assemble the Puffs

    Take one puff pastry sheet and place a spoonful of the prepared onion filling in the center. Place half a boiled egg on top of the filling.

  5. 5.Fold the Pastry

    Carefully fold the four corners of the puff pastry sheet towards the center, pressing them gently to seal the filling and form a square-shaped puff.

  6. 6.Prepare for Air Frying

    Brush the top of each assembled puff with egg wash (optional, for a golden-brown finish). Place the puffs in the air fryer basket, ensuring they are not overcrowded.
