For Chicken Marinade

  • 500 gBoneless chicken
  • 0.5 tspSalt
  • 1 tspBlack pepper
  • 1 tspRed chilli flakes
  • 1 tbspSoya sauce
  • 1 tspGinger garlic paste
  • 2 tbspFine flour
  • 1 tbspCorn flour
  • 1 pieceEgg

For Fried Rice

  • 1 cupCapsicum (julienned)
  • 1 cupCarrots (julienned)
  • 1 cupCabbage (shredded)
  • 0.5 tspSalt
  • 1 tspBlack pepper
  • 1 tspRed chilli flakes
  • 2 tbspSoya sauce
  • 2 tbspChilli sauce
  • 1 tbspWhite vinegar
  • 300 gBoiled rice

Step-by-Step Instructions

  1. 1.Prepare and Marinate Chicken

    Take 500g of boneless chicken, wash it, dry it, and cut it into small pieces. Add 0.5 tsp salt, 1 tsp black pepper, 1 tsp red chilli flakes, 1 tbsp soya sauce, 1 tsp ginger garlic paste, 2 tbsp fine flour, 1 tbsp corn flour, and 1 beaten egg. Mix all ingredients thoroughly until the chicken pieces are well coated. Let it marinate for at least 30 minutes.

  2. 2.Deep Fry Chicken

    Heat oil in a pan for deep frying. Once the oil is hot, add the marinated chicken pieces one by one, ensuring not to overcrowd the pan. Fry on medium-low heat until the chicken is fully cooked and has a nice golden-brown color. This should take about 3-4 minutes per side. Remove the fried chicken and place it on a kitchen towel to absorb excess oil. Repeat for the remaining chicken.

  3. 3.Prepare Fried Egg

    In a clean wok, add 1 tbsp of oil and heat it. Pour in one beaten egg (with a pinch of salt) and fry it until set. Remove the fried egg and let it cool, then cut it into small pieces.

  4. 4.Sauté Vegetables

    Add a little more oil to the wok. Add 1 tsp ginger garlic paste and fry until it turns light golden. Add 1 cup of julienned capsicum and 1 cup of julienned carrots. Fry these vegetables for a few seconds on medium-high heat until they are slightly soft. Then, add 1 cup of shredded cabbage and continue to fry for a short time to remove its moisture.

    Reduce the flame to low. Add 0.5 tsp salt (be mindful as rice and chicken are also salted), 1 tsp black pepper, 1 tsp red chilli flakes, 2 tbsp soya sauce, 2 tbsp chili sauce, and 1 tbsp white vinegar. Mix all the seasonings and vegetables thoroughly.

    Add 300g of fully boiled rice to the wok with the seasoned vegetables. Mix the rice and vegetables well on high flame, ensuring all ingredients are evenly distributed and the flavors combine.

  7. 7.Add Chicken and Egg, Steam

    Add the fried egg pieces and the fried chicken pieces to the rice mixture. Gently mix everything together. Cover the wok and let it steam for just 2 minutes on low heat. This allows the flavors from the chicken and egg to infuse into the rice and ensures the chicken is tender.

    Serve the chicken fried rice hot. Garnish with additional fried chicken and egg pieces if desired. Enjoy!
