Street Style Fried Rice

Ingredients

  • 2 cupsSella basmati rice

  • 1 ½ tspVinegar
  • 2 tsp (optional)Green chilli sauce
  • ½ tspWhite pepper powder
  • ¼ cupSpring onion, chopped
  • 1 tbspCoriander leaves, chopped

Step-by-Step Instructions

  1. 1.Prepare Rice

    Take 2 cups of Sella basmati rice and soak it in water for 20 minutes. After soaking, drain the water completely.

  2. 2.Cook Rice

    Bring water to a roaring boil in a large pot. Add salt to taste and ½ tbsp of oil to the boiling water. Add the soaked and drained rice to the pot. Cook the rice until it is one grain short of being fully cooked (al dente).

  3. 3.Cool Rice

    Immediately drain the cooked rice using a strainer. Spread the hot rice evenly on a large tray or plate to cool down completely. This step is crucial for activating amylopectin, which gives the rice its desired structure for fried rice.

  4. 4.Prepare Vegetables

    Peel and chop 2 large carrots into small, pea-sized dices. Chop 2 medium-sized capsicums into small dices. Chop 8-10 French beans into small pieces. Keep the carrots, capsicum, and French beans separate as they have different cooking times.

  5. 5.Prepare Aromatics

    Finely chop ½ inch ginger, 2-4 garlic cloves, and 2 green chilies. These will be used for the initial tempering.

  6. 6.Start Stir-Frying

    Heat 1 tbsp oil in a wok or a thin-bottomed pan over the largest burner on high heat. Add the chopped ½ inch ginger, 2-4 garlic cloves, and 2 chopped green chilies to the hot oil. Sauté briefly.

  7. 7.Add Carrots and Caramelize Soy Sauce

    Add the diced carrots to the wok. Add ½ tsp sugar and a small pinch of salt. Pour in 1 tbsp dark soy sauce. Stir and cook the mixture, ensuring the soy sauce caramelizes and thickens, coating the carrots. Continue cooking until the sugar in the soy sauce caramelizes, creating a deep, rich flavor and color.

  8. 8.Combine with Rice and Remaining Vegetables

    Add the cooked and completely cooled rice to the wok. Add 1 additional chopped green chili and ¼ inch chopped ginger. Add the chopped French beans and diced capsicum. Toss the rice gently with the caramelized vegetable mixture until well combined.

  9. 9.Add Seasonings

    Add 1 ½ tsp vinegar, 2 tsp green chili sauce (optional), and ½ tsp white pepper powder. Toss everything together vigorously until all ingredients are well combined and heated through.

  10. 10.Garnish and Serve

    Garnish the fried rice with ¼ cup chopped spring onion and 1 tbsp chopped coriander leaves. Gently mix the garnishes into the fried rice, being careful not to break the rice grains. Serve the street-style fried rice hot.
