Ingredients

  • 6 cupsPuffed Rice (Murmura / Mamra / Kurmura)
  • 1/2 cupPeanuts (Moongphali / Sengdane) - roasted & peeled
  • 1/2 cupBoiled Potatoes - peeled & chopped
  • 1/2 cupTomatoes - finely chopped
  • 1/2 cupOnions - finely chopped
  • 2 tbspRaw Mango (Kachchi Kairi) - peeled & finely chopped
  • 1/2 tspSalt (or to taste)
  • 1/4 tspRed Chilli Powder (or to taste)
  • 1/4 cupPeeled Roasted Chana (Chickpea)
  • 2 tbspMasala Chana (Spicy Fried Split Chickpea)
  • 4Papdi / Flat Puri - crushed
  • 1/2 tspChat Masala (or to taste)
  • someSpicy Green Chutney (to taste)
  • someRed Garlic Chutney (to taste)
  • someSweet Tamarind (Imli) Chutney (to taste)
  • 2 tbspNylon Sev / Thin Sev
  • 1/4 cupCilantro (Coriander) - chopped
  • 2 tspLemon juice (or to taste)

Step-by-Step Instructions

  1. 1.Roast Puffed Rice

    Place 6 cups of puffed rice in a large pot or pan over low heat. Roast whilst mixing continuously until it easily crumbles when pressed, ensuring it's crispy. This usually takes about 5-7 minutes.

  2. 2.Combine Dry Ingredients

    Transfer the roasted puffed rice to a large mixing bowl. Add 1/2 cup of roasted and peeled peanuts, 1/2 cup of peeled and chopped boiled potatoes, 1/2 cup of finely chopped tomatoes, 1/2 cup of finely chopped onions, and 2 tablespoons of peeled and finely chopped raw mango (kachchi kairi).

  3. 3.Add Spices and Other Components

    To the bowl, add 1/2 teaspoon of salt (or to taste), 1/4 teaspoon of red chilli powder (or to taste), 1/4 cup of peeled roasted chana (chickpea), 2 tablespoons of masala chana (spicy fried split chickpea), 4 crushed papdi (flat puri), and 1/2 teaspoon of chat masala (or to taste).

  4. 4.Mix Well

    Mix all the ingredients thoroughly until everything is well combined.

  5. 5.Add Chutneys and Fresh Ingredients

    Add some spicy green chutney, some red garlic chutney, and some sweet tamarind (imli) chutney to taste. Then, add 2 tablespoons of nylon sev (thin sev), 1/4 cup of chopped cilantro (coriander), and 2 teaspoons of lemon juice (or to taste).

  6. 6.Final Mix and Serve

    Mix all the ingredients well and immediately. Serve the Bhel Puri onto a plate. Garnish with additional nylon sev, masala chana, raw mango, peeled roasted chana, peanuts, chopped cilantro, a squeeze of lemon juice, and one whole papdi. Enjoy your delicious Bhel Puri!
