All Ingredients - Main Ingredients

  1. Puffed Rice (Murmura / Mamra / Kurmura) 6 cups
  2. Peanuts (Moongphali / Sengdane) - roasted & peeled 1/2 cup
  3. Boiled Potatoes - peeled & chopped 1/2 cup
  4. Tomatoes - finely chopped 1/2 cup
  5. Onions - finely chopped 1/2 cup
  6. Raw Mango (Kachchi Kairi) - peeled & finely chopped 2 tbsp
  7. Salt (or to taste) 1/2 tsp
  8. Red Chilli Powder (or to taste) 1/4 tsp
  9. Peeled Roasted Chana (Chickpea) 1/4 cup
  10. Masala Chana (Spicy Fried Split Chickpea) 2 tbsp
  11. Papdi / Flat Puri - crushed 4
  12. Chat Masala (or to taste) 1/2 tsp
  13. Spicy Green Chutney (to taste) some
  14. Red Garlic Chutney (to taste) some
  15. Sweet Tamarind (Imli) Chutney (to taste) some
  16. Nylon Sev / Thin Sev 2 tbsp
  17. Cilantro (Coriander) - chopped 1/4 cup
  18. Lemon juice (or to taste) 2 tsp

Step-by-Step Instructions

Step 1: Roast Puffed Rice

Place 6 cups of puffed rice in a large pot or pan over low heat. Roast whilst mixing continuously until it easily crumbles when pressed, ensuring it's crispy. This usually takes about .

Step 2: Combine Dry Ingredients

Transfer the roasted puffed rice to a large mixing bowl. Add 1/2 cup of roasted and peeled peanuts, 1/2 cup of peeled and chopped boiled potatoes, 1/2 cup of finely chopped tomatoes, 1/2 cup of finely chopped onions, and 2 tablespoons of peeled and finely chopped raw mango (kachchi kairi).

Step 3: Add Spices and Other Components

To the bowl, add 1/2 teaspoon of salt (or to taste), 1/4 teaspoon of red chilli powder (or to taste), 1/4 cup of peeled roasted chana (chickpea), 2 tablespoons of masala chana (spicy fried split chickpea), 4 crushed papdi (flat puri), and 1/2 teaspoon of chat masala (or to taste).

Step 4: Mix Well

Mix all the ingredients thoroughly until everything is well combined.

Step 5: Add Chutneys and Fresh Ingredients

Add some spicy green chutney, some red garlic chutney, and some sweet tamarind (imli) chutney to taste. Then, add 2 tablespoons of nylon sev (thin sev), 1/4 cup of chopped cilantro (coriander), and 2 teaspoons of lemon juice (or to taste).

Step 6: Final Mix and Serve

Mix all the ingredients well and immediately. Serve the Bhel Puri onto a plate. Garnish with additional nylon sev, masala chana, raw mango, peeled roasted chana, peanuts, chopped cilantro, a squeeze of lemon juice, and one whole papdi. Enjoy your delicious Bhel Puri!
