Ingredients

For the Idli Batter

  • 1 cup packedSpinach
  • 1 cupSprouts (Mung Bean)
  • 3 clovesGarlic
  • 1 inch pieceGinger
  • 2Green chilies
  • 150 gramsTofu
  • 1 tspSalt
  • 2 tbspYogurt
  • 1 tbspOil
  • 1 tspMustard seeds
  • 1 tbspSplit chickpeas (Chana Dal)
  • 1 tbspBlack lentil (Urad Dal)
  • 1 cupSemolina
  • 1 cupButtermilk
  • 1 tspSalt (for batter)
  • 8-10Cashews

Step-by-Step Instructions

  1. 1.Prepare the green paste

    Add spinach, sprouts, garlic, ginger, green chilies, tofu, 1 tsp salt, and yogurt into a blender. Blend until a smooth green paste is formed.

  2. 2.Temper and roast semolina

    Heat 1 tbsp oil in a pan. Add mustard seeds, split chickpeas, and black lentil. Sauté for a minute until fragrant. Then add semolina and roast it on medium heat until it turns light golden brown and aromatic, about 3-4 minutes.

  3. 3.Combine ingredients for batter

    Add the blended green paste to the roasted semolina in the pan. Pour in the buttermilk and mix well to form a smooth batter. Add the remaining 1 tsp salt and mix again.

  4. 4.Prepare and steam idlis

    Grease idli molds with a little oil. Pour the batter into each mold, filling it about three-quarters. Place a cashew on top of each idli. Steam the idlis for 10-12 minutes or until cooked through and firm to touch.

  5. 5.Serve

    Once steamed, carefully remove the idlis from the molds. Serve the protein-rich idlis hot with coconut chutney or any preferred accompaniment.
