Take the desired quantity of semolina in a bowl. Add salt, red chili powder, amchur powder, coriander powder, and Kitchen King masala. Add chopped curry leaves. Mix well. Gradually add water, stirring continuously, until a smooth batter of medium consistency is formed. Ensure the batter is neither too thick nor too thin. Set aside.
Chop the tomatoes and onion into small, even pieces. Cut the paneer into small cubes. Keep these separate as they will be added later.
Heat a non-stick tawa (griddle) over medium heat. Lightly grease it with ghee or oil. Pour one ladleful of the prepared semolina batter onto the tawa and gently spread it into a round shape. Immediately sprinkle chopped onions, chopped tomatoes, and paneer cubes evenly over the batter. Lightly press the toppings into the batter using a spatula to ensure they stick. Cover the toppings with a thin layer of semolina batter.
Drizzle a small amount of ghee or oil around the edges of the pancake. Using a spatula, gently check if the bottom side is cooked and golden brown. Carefully flip the pancake to cook the other side. Cook until both sides are golden brown and the paneer is slightly softened.
Once cooked, carefully transfer the savory pancake to a serving plate. Garnish generously with tomato sauce, spreading it evenly across the surface. Sprinkle namkeen (savory snack mix) over the sauce for added crunch and flavor. Serve hot and enjoy!
