All Ingredients - Main Ingredients

  1. Puffed Rice (Murmura / Mamra / Kurmura) 6 cups
  2. Peanuts (Moongphali / Sengdane) - roasted & peeled 1/2 cup
  3. Boiled Potatoes - peeled & chopped 1/2 cup
  4. Tomatoes - finely chopped 1/2 cup
  5. Onions - finely chopped 1/2 cup
  6. Raw Mango (Kachchi Kairi) - peeled & finely chopped 2 tbsp
  7. Papdi / Flat Puri - crushed 4
  8. Salt 1/2 tsp (or to taste)
  9. Red Chilli Powder 1/4 tsp (or to taste)
  10. Peeled Roasted Chana (Chickpea) 1/4 cup
  11. Masala Chana (Spicy Fried Split Chickpea) 2 tbsp
  12. Chat Masala 1/2 tsp (or to taste)
  13. Spicy Green Chutney Some (to taste)
  14. Red Garlic Chutney Some (to taste)
  15. Sweet Tamarind (Imli) Chutney Some (to taste)
  16. Nylon Sev / Thin Sev 2 tbsp
  17. Cilantro (Coriander) - chopped 1/4 cup
  18. Lemon juice 2 tsp (or to taste)

Step-by-Step Instructions

Step 1: Roast Puffed Rice

Place 6 cups of puffed rice in a pot over low heat. Roast whilst mixing continuously until it easily crumbles when pressed, ensuring it is crisp.

Step 2: Combine Dry Ingredients

Transfer the roasted puffed rice to a large mixing bowl. Add ½ cup roasted and peeled peanuts, ½ cup boiled and chopped potatoes, ½ cup finely chopped tomatoes, ½ cup finely chopped onions, 2 tablespoons peeled and finely chopped raw mango, ½ teaspoon salt (or to taste), ¼ teaspoon red chilli powder (or to taste), ¼ cup peeled roasted chana (chickpea), 2 tablespoons masala chana (spicy fried split chickpea), 4 crushed papdi (flat puri), and ½ teaspoon chat masala (or to taste).

Step 3: Mix Dry Ingredients

Mix all the dry ingredients well until thoroughly combined.

Step 4: Add Chutneys and Fresh Ingredients

Add some spicy green chutney, some red garlic chutney, and some sweet tamarind (imli) chutney to taste. Sprinkle 2 tablespoons of nylon sev (thin sev), ¼ cup chopped cilantro (coriander), and 2 teaspoons of lemon juice (or to taste) over the mixture.

Step 5: Final Mix and Serve

Mix everything well until all ingredients are evenly coated with the chutneys and spices. Serve the Bhel Puri immediately to enjoy its crispness.

Step 6: Garnish and Enjoy

Serve a portion of the prepared Bhel Puri onto a plate. Garnish with some additional nylon sev, masala chana, raw mango, peeled roasted chana, peanuts, chopped cilantro, and a squeeze of fresh lemon juice. Add one papdi for decoration. Your delicious Bhel Puri is ready to enjoy!
