In a bowl with 350g large-sized, cleaned, and deveined prawns, add 1 tsp ginger garlic paste, 1/2 tsp turmeric powder, 1 heaped tbsp Kashmiri chilli powder, 1/2 tsp black pepper powder, 1 tsp coriander powder, 1/2 tsp cumin seeds powder, 1/2 tsp garam masala powder, 1/2 tsp crushed fennel powder, 1 tbsp lemon juice, 1 sprig roughly chopped curry leaves, 1 tbsp rice flour, 1 tbsp corn flour, 1/2 tsp salt, and 1 egg white.

Heat a sufficient amount of oil in a frying pan for deep frying.
Carefully add the prawns to the hot oil in batches. Fry for until they turn golden brown and crisp. Wait for before flipping them. The total cooking time for both sides combined should be about . Be careful not to overcook the prawns, as they can become rubbery.
Once fried, remove the prawns from the oil using a slotted spoon and drain them on a paper towel to remove excess oil. Repeat the frying process for the remaining batches of prawns.

Add 2 to 3 slitted green chillies and 1 sprig of curry leaves to the pan. Fry for until they become fragrant.
Toss the previously fried prawns into the pan with the garlic, chillies, and curry leaves. Mix everything well to ensure the prawns are coated with the aromatic . Serve hot as a delicious starter, optionally with a squeeze of fresh lemon juice.
