Bharwan Bhindi – Stuffed Okra

  • 300 gmsLadies' fingers (okra)
  • 6-8Shallots
  • 2 tbspsOil

For Stuffing

  • 1 tspRed chilli powder
  • 1½ tspsCoriander powder
  • 1 tspCumin powder
  • 1 tspDried mango powder (Amchur)
  • ½ tspTurmeric powder
  • 1 tspGaram masala powder
  • to tasteSalt

Step-by-Step Instructions

  1. 1.Prepare the Okra

    Wash and pat dry 300 gms of ladies' fingers (okra). Make a slit lengthwise in each okra, ensuring not to cut through completely, to create a pocket for stuffing.

  2. 2.Prepare the Stuffing

    In a bowl, combine 1 tsp red chilli powder, 1½ tsps coriander powder, 1 tsp cumin powder, 1 tsp dried mango powder, ½ tsp turmeric powder, 1 tsp garam masala powder, and salt to taste. Mix well.

  3. 3.Stuff the Okra

    Carefully fill each slit okra with the prepared spice mixture.

  4. 4.Sauté the Okra

    Heat 2 tbsps of oil in a pan. Add the stuffed okra and 6-8 shallots. Sauté for 10-12 minutes on medium heat, stirring occasionally, until the okra is tender.

  5. 5.Add Remaining Masala

    Add any remaining spice mixture from the bowl to the pan and mix well with the okra. Continue cooking until the spices are well roasted.

  6. 6.Serve

    Transfer the Bharwan Bhindi to a serving dish. Serve hot with roti or fulka.
