  1. Ladies' fingers (okra) 300 gms
  2. Shallots 6-8
  3. Oil 2 tbsps

  1. Red chilli powder 1 tsp
  2. Coriander powder 1½ tsps
  3. Cumin powder 1 tsp
  4. Dried mango powder (Amchur) 1 tsp
  5. Turmeric powder ½ tsp
  6. Garam masala powder 1 tsp
  7. Salt to taste

Step-by-Step Instructions

Step 1: Prepare the Okra

Wash and pat dry 300 gms of ladies' fingers (okra). Make a slit lengthwise in each okra, ensuring not to cut through completely, to create a pocket for stuffing.

Step 2: Prepare the Stuffing

In a bowl, combine 1 tsp red chilli powder, 1½ tsps coriander powder, 1 tsp cumin powder, 1 tsp dried mango powder, ½ tsp turmeric powder, 1 tsp garam masala powder, and salt to taste. Mix well.

Step 3: Stuff the Okra

Carefully fill each slit okra with the prepared spice mixture.

Step 4: Sauté the Okra

Heat 2 tbsps of oil in a pan. Add the stuffed okra and 6-8 shallots. for on medium heat, stirring occasionally, until the okra is tender.

Step 5: Add Remaining Masala

Add any remaining spice mixture from the bowl to the pan and mix well with the okra. Continue cooking until the spices are well roasted.

Step 6: Serve

Transfer the Bharwan Bhindi to a serving dish. Serve hot with roti or fulka.

Pro Tips

• Do not add water during cooking to prevent stickiness and maintain texture.

• Cook on medium heat for even roasting of spices and tender okra.
