Follow each step to make the recipe successfully.
Trim the ends of 300 gms ladies' fingers. Make a lengthwise slit in each lady's finger, ensuring not to cut through completely, to create a pocket for stuffing.
In a bowl, combine 1 tsp red chilli powder, 1½ tsps coriander powder, 1 tsp cumin powder, 1 tsp dried mango powder, ½ tsp turmeric powder, 1 tsp garam masala powder, and salt to taste. Mix all the spices thoroughly with a spoon.
Carefully stuff each slit lady's finger with the prepared spice mix, ensuring the spices are well distributed inside.
Heat 2 tbsps of oil in a pan. Once hot, gently place the stuffed ladies' fingers into the pan.
Add 6-8 shallots to the pan with the ladies' fingers. Cook for on medium heat, stirring occasionally, until the okra starts to soften and the spices are fragrant. Do not add water at any point.
Sprinkle any remaining spice mix from the bowl over the cooking bhindi and mix well to ensure all pieces are coated. Continue cooking until the bhindi is tender and the spices are well roasted.
Serve the Bharwan Bhindi hot with roti or as a side dish.
