Bharwan Bhindi – Indian Stuffed Okra

Ingredients

For Stuffed Okra

  • 300 gmsLadies' fingers (bhindi)

For Spice Stuffing

  • 1 tspRed chilli powder
  • 1½ tspsCoriander powder
  • 1 tspCumin powder
  • 1 tspDried mango powder (amchur)
  • ½ tspTurmeric powder
  • 1 tspGaram masala powder
  • to tasteSalt

For Cooking

  • 2 tbspsOil
  • 6-8Shallots

Step-by-Step Instructions

  1. 1.Prepare Ladies' Fingers

    Trim the ends of 300 gms ladies' fingers. Make a lengthwise slit in each lady's finger, ensuring not to cut through completely, to create a pocket for stuffing.

  2. 2.Prepare Spice Mix

    In a bowl, combine 1 tsp red chilli powder, 1½ tsps coriander powder, 1 tsp cumin powder, 1 tsp dried mango powder, ½ tsp turmeric powder, 1 tsp garam masala powder, and salt to taste. Mix all the spices thoroughly with a spoon.

  3. 3.Stuff Ladies' Fingers

    Carefully stuff each slit lady's finger with the prepared spice mix, ensuring the spices are well distributed inside.

  4. 4.Heat Oil and Add Okra

    Heat 2 tbsps of oil in a pan. Once hot, gently place the stuffed ladies' fingers into the pan.

  5. 5.Add Shallots and Cook

    Add 6-8 shallots to the pan with the ladies' fingers. Cook for 10-12 minutes on medium heat, stirring occasionally, until the okra starts to soften and the spices are fragrant. Do not add water at any point.

  6. 6.Add Remaining Spice Mix

    Sprinkle any remaining spice mix from the bowl over the cooking bhindi and mix well to ensure all pieces are coated. Continue cooking until the bhindi is tender and the spices are well roasted.

  7. 7.Serve

    Serve the Bharwan Bhindi hot with roti or as a side dish.
