  • 2 cupsChapati Flour (Atta)
  • 1 teaspoonOil
  • as needed (approx. 1 cup)Water

Step-by-Step Instructions

  1. 1.Prepare the Dough

    In a large bowl, add 2 cups of chapati flour. To prevent the chapatis from becoming brittle, add 1 teaspoon of oil to the flour. Mix the oil into the flour thoroughly.

  2. 2.Knead the Dough

    Gradually add water to the flour, mixing it with your hands. Continue adding water slowly until the dough comes together and is neither too wet nor too hard. If it becomes too wet, add a little more flour. Knead the dough for about 5 minutes until it's smooth and pliable.

  3. 3.Rest the Dough

    Apply a tiny bit of oil to your palms and smooth out the kneaded dough ball. Cover the dough with cling film or a damp cloth and let it rest for 10 to 15 minutes. This resting period is crucial for soft chapatis. The dough can be stored in the fridge for up to 2-3 days.

  4. 4.Portion and Roll the Dough

    Take a small portion of the rested dough and roll it into a smooth ball between your palms. Dip the dough ball into dry flour to coat it lightly.

  5. 5.Roll the Chapati

    Place the floured dough ball on a rolling board and use a rolling pin to roll it into a thin, even circle, about 6-8 inches in diameter. You can roll it to your desired thickness and shape.

  6. 6.Cook the Chapati (First Side)

    Heat a skillet (tava) over medium-high heat until it's nice and hot. Place the rolled chapati onto the hot skillet. After a few seconds, you will notice small bubbles starting to appear on the surface. At this stage, flip the chapati over for its first turn.

  7. 7.Cook the Chapati (Second Side and Puffing)

    Let the chapati cook for a few more seconds on the second side until it's done. You can check for light brown spots. Then, using a clean tea towel, gently press on the sides of the chapati (not the center) while it's on the skillet. This will help it puff up beautifully.

  8. 8.Serve with Butter/Ghee

    Once puffed and cooked through, remove the chapati from the skillet and place it on a plate. If desired, spread a small amount of butter or ghee on top to keep it soft and add flavor. Serve immediately or wrap in foil to keep warm and soft.
