Heat 100ml of oil in a pan. Add 1 sliced onion and cook for on medium heat until it turns light golden brown and softened.

Pour in 300ml of water and mix well. Bring the mixture to a boil and then let it on medium heat for , allowing the flavors to meld.
Add 500g of frozen mixed vegetables (cauliflower, carrots, peas, broccoli) to the pan. Mix thoroughly with the gravy. Cover and cook on medium heat for , or until the vegetables are tender.
Once the vegetables are cooked to your desired tenderness, stir in a handful of fresh coriander. Mix well and serve hot.
