  • 1 tspGinger Paste

  • 1 tspSalt
  • 1 tspChilli Powder
  • 1/2 tspTurmeric Powder
  • 1 tspCumin Powder
  • 1 tbspDried Fenugreek
  • 300mlWater
  • 500gFrozen Vegetables
  • handfulCoriander

Step-by-Step Instructions

  1. 1.Prepare the Base

    Heat 100ml of oil in a pan. Add 1 sliced onion and cook for 4-5 minutes on medium heat until it turns light golden brown and softened.

  2. 2.Add Aromatics and Cumin Seeds

    Add 1 teaspoon of garlic paste, 1 teaspoon of ginger paste, and 1 teaspoon of cumin seeds to the pan. Sauté for 1 minute until fragrant.

  3. 3.Soften Tomatoes

    Add 2 chopped tomatoes to the pan. Cook for 4-5 minutes until the tomatoes soften and blend into the onion mixture.

  4. 4.Introduce Spices

    Stir in 1 teaspoon of Kashmiri chili, 1 teaspoon of salt, 1 teaspoon of chili powder, 1/2 teaspoon of turmeric powder, 1 teaspoon of cumin powder, and 1 tablespoon of dried fenugreek. Cook the spices for 3-4 minutes, stirring constantly, until the oil separates from the mixture.

  5. 5.Add Water and Simmer

    Pour in 300ml of water and mix well. Bring the mixture to a boil and then let it simmer on medium heat for 3-4 minutes, allowing the flavors to meld.

  6. 6.Cook Vegetables

    Add 500g of frozen mixed vegetables (cauliflower, carrots, peas, broccoli) to the pan. Mix thoroughly with the gravy. Cover and cook on medium heat for 10-15 minutes, or until the vegetables are tender.

  7. 7.Garnish and Serve

    Once the vegetables are cooked to your desired tenderness, stir in a handful of fresh coriander. Mix well and serve hot.
