  3. Boiled walnuts 250 gms
  4. Ghee ¼ cup
  5. Orange juice ½ cup
  6. Salt a pinch (Optional)

  4. Pistachios (blanched & slivered) 4-5 no.

Step-by-Step Instructions

Step 1: Boil Walnuts

Add water to a pan and bring it to a boil. Once boiling, add 250 grams of walnuts and let them boil for a few minutes until the water turns dark, indicating impurities are being released.

Step 2: Soak Dates

Take 500 grams of hard Zahidi dates. Pit them carefully and then soak them overnight in cold water, or for at least in lukewarm water, to soften them.

Step 3: Drain and Rinse Walnuts

After boiling, drain the walnuts using a sieve to remove the dark water. Rinse the boiled walnuts thoroughly under cold running water to further clean them.

Step 4: Cook Dates in Ghee

In a separate pan, add 1 cup of ghee and heat it over medium flame. Once the ghee is hot, add the soaked and pitted dates to the pan. Cook the dates in ghee for about , stirring occasionally.

Step 5: Mash Dates and Walnuts

Using a pav bhaji masher or a similar tool, begin mashing the dates in the pan. Once the dates are partially mashed, add the boiled and rinsed walnuts. Continue mashing until both the dates and walnuts are well combined and form a thick, halwa-like consistency, about .

Step 6: Add More Ghee and Orange Juice

Add an additional ¼ cup of ghee to the halwa mixture. Then, pour in ½ cup of orange juice. Continue to cook and stir the halwa for about until the orange juice is completely absorbed and the ghee starts to separate from the halwa, indicating it's well cooked.

Step 7: Season with Salt

Optionally, add a pinch of salt to the halwa. Stir well to incorporate the salt, which helps to enhance and balance the natural sweetness of the dates.

Step 8: Garnish and Serve

Transfer the hot Walnut & Dates Halwa into individual serving bowls. Garnish generously with silver vark, whole walnuts, thinly sliced dates, blanched and slivered pistachios, and a final sprinkle of cardamom powder. Serve warm, ideally with a scoop of neutral vanilla ice cream or fresh malai.
