Take a large bowl. Add half a cup of grated cabbage, one medium-sized grated onion, one-third cup of grated carrot, and half a cup of chopped coriander. Then, add half a tablespoon of coriander seeds, one-third tablespoon of cumin seeds, one-fourth tablespoon of chaat masala (to taste), chili flakes (to taste), and salt (to taste). Mix all these ingredients thoroughly until well combined.
To the vegetable and spice mixture, add half a cup of wheat flour and mix again until the flour is evenly distributed among the vegetables. Next, add half a cup of rice flour and mix thoroughly.
Gradually add water to the mixture while continuously mixing. Continue adding water and mixing until a thick, flowing batter is formed. The batter should be thick enough to hold its shape when spooned, but still have a flowing consistency.
Heat a little oil in a pan over medium-high flame. Once the oil is hot, put one big tablespoon of the prepared batter into the pan. You can make any desired shape. Repeat the process to add more fritters to the pan, ensuring they have enough space to cook. Cook the fritters on both sides until they turn light brown and crispy.
Once cooked to a light brown color on both sides, remove the fritters from the pan. Serve the delicious and tasty vegetable fritters hot with any sauce of your choice.
