  8. Boiling Water 2 cups
  9. Salt 1 tsp
  10. Yogurt 1 tbsp
  11. Basmati Rice (soaked for 20 mins) 1 cup
  12. Yellow Food Color (or saffron) 1/4 tsp

  13. Cauliflower Florets 1/2 cup
  14. French Beans (chopped) 1/2 cup
  15. Carrots (chopped) 1/2 cup
  16. Yogurt 2 tbsp
  17. Water 1/2 cup
  18. Green Peas 1/4 cup
  19. Paneer (cottage cheese, cubed) 1/2 cup

Step-by-Step Instructions

Step 1: Prepare the Rice - Sauté Spices

Heat 1 tablespoon of oil in a pan. Add 1 bay leaf, 1 inch cinnamon stick, 2-3 green cardamom pods, 4-5 black peppercorns, and 2-3 cloves. lightly until fragrant. Add 1/4 cup of fried onions and stir lightly.

Step 2: Boil Water and Add Rice

Pour 2 cups of boiling water into the pan. Add 1 teaspoon of salt and 1 tablespoon of yogurt. Stir gently. Once the water starts boiling, add 1 cup of basmati rice that has been soaked for . Stir lightly to ensure rice grains do not break.

Step 3: Parboil Rice

Cook the rice until it is half-done. The grain should still be a little raw but cooked enough to be pliable. This usually takes about . Strain the parboiled rice into a colander.

Add 1/2 cup of chopped tomatoes and stir. Then add 1/2 teaspoon of turmeric powder, 1 teaspoon of red chili powder, and 1 teaspoon of salt. Stir well to combine the spices with the tomatoes.

Step 7: Add Vegetables and Yogurt

Add 1/2 cup of cauliflower florets, 1/2 cup of chopped French beans, and 1/2 cup of chopped carrots. Add 2 tablespoons of yogurt and stir everything together.

Step 8: Cook Vegetables

Pour 1/2 cup of water into the pan to help the vegetables cook. Add 1/4 cup of green peas. Stir and cook until the vegetables are tender and the gravy thickens.

Step 9: Layer the Biryani

Transfer the cooked vegetable gravy to a larger, heavy-bottomed pan. Spread the vegetables evenly. Place 1/2 cup of paneer chunks on top of the vegetables. Carefully layer the parboiled rice on top of the vegetables and paneer, ensuring the grains do not break. Do not press the rice down.

Step 10: Dum Cook the Biryani

Place the pan on a very low flame for for dum cooking. Cover the pan with a tight-fitting lid to trap the and allow the flavors to meld.
