Step-by-Step Instructions

Step 1: Boil Water

Pour 4 cups (950ml) of water into a pan and bring it to a boil.

Step 2: Prepare Corn and Milk Mixture

In a blender, combine 1/3 cup (320ml) of evaporated milk and 1 can (425g) of cream-style sweet corn. Blend until finely smooth and set aside.

Step 3: Add Agar Agar Powder

Once the water starts to boil, add 10g of agar agar powder to the pan. Mix well with a wooden spoon until the powder is fully dissolved.

Step 4: Add Sugars and Salt

Add 1/4 cup (50g) of rock sugar, 3/4 cup (130g) of granulated sugar, and 1/8 teaspoon of salt to the boiling mixture. Continue to cook and stir until all the sugar dissolves completely.

Step 5: Incorporate Corn Mixture

Pour the finely blended evaporated milk and sweet corn mixture into the pan. Mix well to combine all ingredients.

Step 6: Add Custard Powder

Add 1/8 cup (15g) of custard powder to the mixture. Stir thoroughly until the custard powder is fully incorporated and there are no lumps.

Step 7: Add Food Colouring and Thicken

Add a few drops of yellow food colouring to achieve the desired vibrant yellow color. Continue to cook and stir the mixture until it thickens slightly, reaching a consistency ready to be transferred.

Step 8: Strain the Mixture

Carefully pour the thickened mixture through a fine-mesh strainer into a measuring jug or another container to ensure a smooth consistency, removing any small lumps or unblended corn pieces.

Step 9: Pour into Molds and Set

Pour the strained mixture into 11 individual molds. Let the agar agar set at room temperature, then chill in the refrigerator for at least until firm before serving. You can also freeze it to enjoy it like ice-cream.

Step 10: Serve

Once set, gently remove the agar agar from the molds. You can use a toothpick to help release the edges if needed. Serve chilled.
