Finnish Style Blueberry Pie

Ingredients

For the Pie Base

  • 125 gUnsalted Butter (melted)
  • 1/2 cupPlain White Sugar
  • 1Egg
  • 1.5 cupsPlain All-Purpose Flour
  • 1 pinchSalt
  • 1 tspBaking Powder
  • 3 tbspOats (rolled or quick)
  • 150 gSour Cream (or natural/Greek yogurt)

For the Blueberry Topping

  • 250 gFresh Blueberries (or frozen)
  • 2 tbspSugar
  • 1 tbspCornflour (Cornstarch)

Step-by-Step Instructions

  1. 1.Prepare Wet Ingredients

    In a mixing jug, combine 125g of melted unsalted butter and 1/2 cup of plain white sugar. Stir well until combined. Add 1 egg, break the yolk, and stir again until fully incorporated.

  2. 2.Prepare Dry Ingredients

    In a mixing bowl, add 1.5 cups of plain all-purpose flour, 1 pinch of salt, 1 teaspoon of baking powder, and 3 tablespoons of oats (rolled or quick). Mix these dry ingredients together.

  3. 3.Combine Dough Ingredients

    Pour the wet ingredients from the jug into the bowl with the dry ingredients. Mix everything together until a slightly sticky dough forms. Add 150g of sour cream (or natural/Greek yogurt) and carefully mix it into the dough until it becomes a slightly wetter, stickier consistency.

  4. 4.Prepare Baking Dish

    Take a 26cm (approximately 10-inch) quiche dish, pie plate, or a similar baking dish. Grease the entire interior surface, including the sides, with melted butter using a brush.

  5. 5.Form the Pie Base

    Transfer the prepared dough into the greased baking dish. Using a spatula, press the dough to cover the entire bottom surface and slightly up the sides, forming a 'pastry bowl'.

  6. 6.Prepare Blueberry Topping

    In a separate bowl, combine 250g of fresh blueberries (or frozen) with 2 tablespoons of sugar and 1 tablespoon of cornflour (cornstarch). Toss everything together until the blueberries are evenly coated.

  7. 7.Assemble and Bake the Pie

    Spread the coated blueberries evenly over the dough in the baking dish. Gently press them down slightly with the back of a spoon to ensure they are firm in place. Preheat your oven to 225°C (440°F). Bake the pie for approximately 20-25 minutes, or until the pie base has risen slightly and turned a lovely golden brown.

    Once baked, remove the pie from the oven. It is best served warm, fresh out of the oven. Enjoy!
