Spicy Butter Corn & Crispy Corn

Ingredients

For Crispy Corn

  • 100 gFrozen Corn
  • 1 tspMaida (All-purpose flour)
  • 1 tspRice Flour
  • 2.5 tspCornflour
  • 1 tspWater
  • as neededGroundnut Oil (for deep frying)
  • 1 (finely chopped)Celery Stalk
  • 1.5 tsp (finely chopped)Garlic
  • 0.5 (finely chopped)Onion
  • 50 g (finely chopped)Mixed Bell Peppers (red, yellow, green)
  • 0.25 tspChili Powder
  • 0.25 tspPepper Powder
  • to tasteSalt
  • 2 tspSoy Sauce
  • 0.5 tspSugar
  • 1 tbsp (chopped)Coriander Leaves
  • 1 tbsp (chopped)Spring Onion

For Spicy Butter Corn

  • 300 gFrozen Corn
  • as neededWater (for boiling)
  • 1 pinch (for boiling) + to taste (for seasoning)Salt
  • 4-5 tspMelted Salted Butter
  • 0.5 tspKashmiri Chili Powder
  • 1 pinchPepper Powder
  • 1 tbsp (chopped)Coriander Leaves
  • 3 tspLemon Juice

Step-by-Step Instructions

  1. 1.Prepare Celery for Crispy Corn

    Take a celery stalk, remove the leaves, and finely chop the stalk. Set aside.

  2. 2.Coat the Corn for Frying

    Place 100g of washed frozen corn in a bowl. Add 1 tsp maida, 1 tsp rice flour, and 1 tsp cornflour. Mix well, allowing the natural moisture of the corn to help coat the flours. Add 1 tsp of water and mix again. Finally, add another 1.5 tsp of cornflour and mix until the corn is evenly coated and dry.

  3. 3.Deep Fry the Corn

    Heat groundnut oil in a deep pan until hot. Carefully add the coated corn to the hot oil. Fry for about 1 minute until golden brown and crispy. Remove the fried corn and drain excess oil.

  4. 4.Sauté Aromatics and Vegetables

    In a separate wok or uruli, heat 1 tbsp of the fried groundnut oil. Add the finely chopped celery and sauté. Then, add 1.5 tsp finely chopped garlic and sauté until fragrant. Add 0.5 finely chopped onion and sauté quickly until slightly roasted, ensuring it doesn't release water. Add 50g of finely chopped mixed bell peppers (red, yellow, green) and sauté briefly.

  5. 5.Season and Mix Crispy Corn

    To the sautéed vegetables, add 0.25 tsp chili powder, 0.25 tsp pepper powder, and salt to taste. Add the fried crispy corn to the wok. Pour in 2 tsp soy sauce and add 0.5 tsp sugar. Mix everything thoroughly. Finally, add 1 tbsp chopped coriander leaves and 1 tbsp chopped spring onion. Mix well using the residual heat of the wok. Turn off the gas.

  6. 6.Boil Corn for Spicy Butter Corn

    In a saucepan, bring water to a rolling boil. Add 300g of frozen corn and a pinch of salt (for color). Boil for 2 minutes until the corn is tender and juicy. Strain the water completely.

  7. 7.Prepare Spicy Butter Corn

    In a bowl, combine 4-5 tsp melted salted butter with the boiled corn. Add a pinch of salt (adjust based on butter's saltiness), 0.5 tsp Kashmiri chili powder, a pinch of pepper powder, and 1 tbsp chopped coriander leaves. Finally, add 3 tsp lemon juice. Mix all ingredients well until the corn is evenly coated.

  8. 8.Serve

    Serve both the Crispy Corn and Spicy Butter Corn immediately as delicious evening snacks.
