Spicy Grilled Corn on the Cob (Bhutta) - Indian Street Style

Ingredients

Main Ingredients

  • 1Corn on the Cob

For the Marinade

  • 2-3 tbspHung Curd
  • 1 tspRed Chilli Powder
  • 2-3 tbspSpice Blend (e.g., Tandoori Masala/Chaat Masala)
  • 1/2 tspSalt
  • 1 tspKasuri Methi (Dried Fenugreek Leaves)
  • from 1/2 lemonLemon Juice
  • 1 tbspMustard Oil

Step-by-Step Instructions

  1. 1.Prepare the Corn

Carefully peel back the green husks from the corn on the cob, revealing the kernels. You can leave the husks attached at the base to use as a handle.

  2. 2.Prepare the Marinade

In a bowl, combine 2-3 tablespoons of hung curd, 1 teaspoon of red chilli powder, 2-3 tablespoons of your preferred spice blend (like Tandoori Masala or Chaat Masala), 1/2 teaspoon of salt, and 1 teaspoon of Kasuri Methi. Squeeze in the juice from half a lemon.

  3. 3.Mix the Marinade

Whisk all the ingredients together until a smooth, thick paste is formed. Then, add 1 tablespoon of mustard oil and whisk again to fully incorporate it into the marinade.

  4. 4.Apply Marinade to Corn

Using a brush, generously coat the entire corn on the cob with the prepared marinade, ensuring all kernels are covered.

  5. 5.Grill the Corn

Place the marinated corn on a grill rack over a gas stove. Cook on a low to medium flame, continuously rotating the corn for 5-7 minutes until it is evenly charred and cooked through. The corn should have visible black spots from grilling.

  6. 6.Serve

Once grilled to perfection, remove the corn from the heat. Serve hot, optionally garnished with a squeeze of fresh lemon juice and a sprinkle of chopped cilantro.
