All Ingredients - Main Ingredients

  1. Cooked Sonamasoori Rice 1 bowl (approx. 250g)
  2. Onion 1 large (sliced)
  3. Tomato 2 (diced)
  4. Capsicum (Green Bell Pepper) 1 (chopped)
  5. Green Chilli 3-4 small (slit)
  6. Curry Leaves a few sprigs
  7. Spring Onion 1 bowl (chopped, white and green parts)
  8. Ginger 1 tbsp (chopped)
  9. Garlic 1 tbsp (chopped)
  10. Coriander Leaves 2 tbsp (chopped)
  11. Homemade Garam Masala (1 tsp coriander seeds, 1 tsp cumin seeds, 1 small cardamom, 1 cinnamon stick, 2-3 cloves - dry roasted and ground) 2 tsp
  12. Chilli Powder 4 tsp
  13. Salt to taste
  14. Sunflower Oil 2 tbsp
  15. Ghee 2 tsp

Step-by-Step Instructions

Step 1: Heat Oil and Ghee

Heat 2 tablespoons of sunflower oil and 2 teaspoons of ghee in a pan or wok over high flame.

Step 2: Sauté Aromatics

Once the oil is hot, add chopped ginger and garlic. Fry for a few seconds until fragrant.

Step 3: Add Onions, Green Chillies, and Curry Leaves

Add the sliced onions to the pan. Fry until they become light brown and slightly translucent. Then, add the green chilies and curry leaves and continue to fry for about .

Step 4: Add Tomatoes and Spices

Add the tomatoes and fry until they soften. Next, add the homemade garam masala and chili powder. Mix well and cook until the spices are fragrant and the oil starts to separate from the mixture, about .

Step 5: Add Capsicum and Salt

Add the chopped capsicum (green bell pepper) and fry for until it's slightly tender-crisp. Add salt to taste and mix thoroughly.
