Follow each step to make the recipe successfully.
In a mortar and pestle, add 6 cloves of garlic, 1 teaspoon of cumin seeds, and 1 teaspoon of black pepper. Crush them coarsely to release their fresh and earthy aroma. Set aside.
Take 1 cup (250 ml) of raw rice and 3 tablespoons of toor dal in a bowl. Wash them thoroughly a few times with water until the water runs clear. Drain and keep ready.
Heat 3 tablespoons of ghee in a pressure cooker. Once the ghee is hot, add 1 teaspoon of mustard seeds and 1 red chilli cut into two pieces. Let them splutter.
Add 1 split green chilli, 1/4 teaspoon of asafoetida powder, and the crushed garlic, cumin, and pepper masala to the cooker. everything on a low flame until fragrant.
Add 2 finely chopped tomatoes to the cooker and cook until they turn soft and mushy. Then, add 1 teaspoon of salt, 1/4 teaspoon of turmeric powder, and 2 teaspoons of rasam powder (or sambar powder). Mix well and allow the tomatoes to blend with the spices.
Throw in a few fresh curry leaves and give it a nice mix. Pour in 1 cup of tamarind water and stir everything together.
Add the washed rice and dal mixture into the cooker. Mix gently to combine with the other ingredients. Pour in 6 cups of water, using the same cup that measured the rice. Stir everything once again to ensure even distribution.
Close the pressure cooker with its lid and cook on medium flame for about 7 whistles. Once cooked, allow the pressure to release naturally before opening the cooker.
Open the cooker and gently stir the perfectly cooked rasam rice. Finally, add some freshly chopped coriander leaves and drizzle about 2 tablespoons of ghee on top. Mix everything gently. Your perfectly soft, delicious, and flavorful Rasam Rice is ready to be enjoyed.
