For Talhar Mirch Paste

All Ingredients

Main Ingredients

Step-by-Step Instructions

Follow each step to make the recipe successfully.

  1. Prepare Talhar Mirch Paste

Soak the talhar mirch (dried red chilies) in warm water for until softened. Transfer the soaked chilies along with their water into a blender and blend until a smooth paste is formed. Set aside 2-3 tablespoons of this paste for the recipe and freeze any leftover for later use.

  2. Temper Spices

In a wok, add 1/2 cup of oil and heat it. Once hot, add a few curry leaves, 1 teaspoon of roasted and crushed cumin and coriander seeds, 1/2 teaspoon of garam masala powder, 1/2 teaspoon of mango powder (amchur), 1/2 teaspoon of mustard seeds, and 1/2 teaspoon of black pepper powder. Stir and fry for a few seconds until fragrant.

  3. Add Gram Flour and Wet Ingredients

Add 1 tablespoon of roasted gram flour (besan) to the wok and fry for a few minutes until lightly browned and aromatic. Then, add 2-3 tablespoons of the prepared talhar mirch paste and 1 tablespoon of jaggery. Mix well until the jaggery dissolves and the mixture combines.

  4. Form the Masala Base

Pour in 1/4 cup of water and mix thoroughly. Add salt to taste (approximately 1 teaspoon) and stir to combine all the ingredients into a thick masala base.

  5. Add Potatoes and Dry Spices

Add 500g of boiled baby potatoes to the wok. Mix well to ensure the potatoes are evenly coated with the masala. Sprinkle 3/4 teaspoon of chaat masala and 1 teaspoon of chili flakes over the potatoes and mix again.

  6. Add Tamarind and Finish Cooking

Pour in 1/4 cup of tamarind pulp along with a pinch of red food color to enhance the vibrant red hue. Mix everything thoroughly. Continue to fry the potatoes, stirring occasionally, until the masala coats the potatoes well and the sauce thickens slightly. Taste and adjust any spices as needed at this stage.

  7. Serve Laal Aloo

Dish out the Laal Aloo into a serving bowl. Garnish generously with freshly chopped coriander. Serve hot and enjoy your Karachi street-style Laal Aloo!
