One-Pot Lentil Rice

Ingredients

  • 1 cupBrown Lentils
  • 3 cupsWater (for soaking lentils)
  • 1 cupBasmati Rice
  • 3 clovesGarlic
  • 1 small pieceGinger
  • 1Red Onion
  • 1Tomato
  • 2 tablespoonsOlive Oil
  • 1 generous pinchSalt
  • 1/2 teaspoonCumin
  • 1/2 teaspoonChili Powder
  • 1 1/2 teaspoonsSweet Paprika
  • 1 teaspoonCoriander
  • to tasteFresh Cracked Pepper
  • 1 1/2 cupsVegetable Stock
  • freshly squeezed, to tasteLemon Juice
  • chopped, for garnishFresh Parsley
  • optional drizzleOlive Oil (for drizzle)

Step-by-Step Instructions

  1. 1.Soak the Lentils

    Place 1 cup of brown lentils into a large bowl and fill with about 3 cups of water. Soak the lentils for approximately 8 hours or overnight until they have significantly increased in size.

  2. 2.Drain Lentils and Rinse Rice

    Strain the soaked lentils and set them aside. Place 1 cup of Basmati rice into a bowl, rinse and drain 2-3 times to remove excess starch, then set aside.

  3. 3.Prepare Aromatics and Vegetables

    Finely chop 3 cloves of garlic and a small piece of ginger. Dice one red onion and one tomato.

  4. 4.Sauté Onions

    Heat 2 tablespoons of olive oil in a sauté pan over medium heat. Add the diced red onions and sauté for 4-5 minutes until softened.

  5. 5.Add Garlic and Ginger

    Add the finely chopped garlic and ginger to the pan with the onions. Sauté for an additional 1-2 minutes until fragrant.

  6. 6.Sauté Lentils and Rice with Spices

    Add the strained lentils to the pan and sauté for about 1 minute. Then, add the rinsed Basmati rice, a generous pinch of salt, 1/2 teaspoon of cumin, 1/2 teaspoon of chili powder, 1 1/2 teaspoons of sweet paprika, 1 teaspoon of coriander, and fresh cracked pepper to taste. Stir well to combine all the ingredients.

  7. 7.Incorporate Tomatoes and Stock

    Add the diced tomatoes to the mixture and sauté for about 1 minute. Pour in 1 1/2 cups of vegetable stock. Turn the heat to medium-high and stir to deglaze the pan, scraping up any flavorful bits from the bottom.

  8. 8.Simmer and Steam

    Once the water begins to bubble, reduce the heat to medium-low. Cover the pan with a lid and cook for 15 minutes. After 15 minutes, turn off the heat and let the rice steam further for 10 minutes, keeping the lid on.

  9. 9.Serve and Garnish

    Plate the lentil rice generously. Squeeze fresh lemon juice over the top, sprinkle with freshly chopped parsley, and optionally drizzle with olive oil and fresh cracked pepper to taste.
