Step-by-Step Instructions

Step 1: Prepare the Mashed Potatoes

Take the boiled and peeled potatoes in a bowl. Mash them thoroughly with a fork until smooth.

Step 2: Season the Potatoes

Add salt to taste, 1 teaspoon of turmeric powder, 1 teaspoon of cumin powder, 1 teaspoon of chili powder, 1 teaspoon of coriander powder, and 1/2 teaspoon of black pepper to the mashed potatoes. Mix all the spices well into the potatoes until evenly combined.

Step 3: Prepare the Onion Mixture

Heat 1 tablespoon of cooking oil in a pan over medium heat. Add 1 teaspoon of cumin seeds and let them splutter. Then, add 1/2 cup of finely chopped onion and fry for approximately until they turn translucent and slightly golden.

Step 4: Add Aromatics and Herbs

Add chopped fresh green chilies (to taste) and 1 tablespoon of ginger-garlic paste to the pan. Fry for another until the raw smell of ginger-garlic disappears. Turn off the heat and stir in 1/4 cup of chopped cilantro (coriander leaves). Mix well.

Step 5: Combine Mixtures

Add the fried onion and spice mixture to the seasoned mashed potatoes. Mix thoroughly with a fork until all ingredients are well incorporated.

Step 6: Assemble the Sandwich

Take two slices of white bread. Place one cheese slice on each bread slice. Spread a generous and even layer of the potato mixture over one of the cheese-covered bread slices. Place another cheese slice on top of the potato mixture, then cover with the second bread slice to complete the sandwich.

Step 7: Pan-Fry the Sandwich

Melt 1 tablespoon of butter in the same pan used for the onion mixture over medium-low heat. Place the assembled sandwich in the pan. Cook for approximately , pressing gently with a spatula, until the bottom is golden brown. Flip the sandwich and cook the other side for another until it's also golden brown and the cheese has melted.

Step 8: Serve

Once cooked, remove the sandwich from the pan. Cut it into halves or triangles and serve immediately.

Pro Tips

• Adjust the amount of fresh chili and chili powder to your preferred spice level.

• Ensure the heat is below medium when frying the sandwich to prevent burning the bread while allowing the cheese to melt.

Recipe Variations

• Use whole wheat bread for a healthier option.

• Add other vegetables like peas or carrots to the potato mixture.

• Experiment with different types of cheese.
