Potato Cheese Sandwich – Indian Style

Ingredients

For Potato Mixture

  • 500 gPotatoes, boiled and mashed
  • to tasteSalt
  • 1 tspTurmeric powder
  • 1 tspCumin powder
  • 1 tspChili powder
  • 1 tspCoriander powder
  • 1/2 tspBlack pepper

For Frying Mixture

  • 1 tbspCooking oil
  • 1 tspCumin seeds
  • 1/2 cupOnion, finely chopped
  • to tasteFresh green chilies, chopped
  • 1 tbspGinger-garlic paste
  • 1/4 cupCilantro (coriander leaves), chopped

For Assembly & Frying

  • 4White bread slices
  • 4Cheese slices
  • 2 tbspButter

Step-by-Step Instructions

  1. 1.Prepare the Mashed Potatoes

    Take the boiled and peeled potatoes in a bowl. Mash them thoroughly with a fork until smooth.

  2. 2.Season the Potatoes

    Add salt to taste, 1 teaspoon of turmeric powder, 1 teaspoon of cumin powder, 1 teaspoon of chili powder, 1 teaspoon of coriander powder, and 1/2 teaspoon of black pepper to the mashed potatoes. Mix all the spices well into the potatoes until evenly combined.

  3. 3.Prepare the Onion Mixture

    Heat 1 tablespoon of cooking oil in a pan over medium heat. Add 1 teaspoon of cumin seeds and let them splutter. Then, add 1/2 cup of finely chopped onion and fry for approximately 5 minutes until they turn translucent and slightly golden.

  4. 4.Add Aromatics and Herbs

    Add chopped fresh green chilies (to taste) and 1 tablespoon of ginger-garlic paste to the pan. Fry for another 2 minutes until the raw smell of ginger-garlic disappears. Turn off the heat and stir in 1/4 cup of chopped cilantro (coriander leaves). Mix well.

  5. 5.Combine Mixtures

    Add the fried onion and spice mixture to the seasoned mashed potatoes. Mix thoroughly with a fork until all ingredients are well incorporated.

  6. 6.Assemble the Sandwich

    Take two slices of white bread. Place one cheese slice on each bread slice. Spread a generous and even layer of the potato mixture over one of the cheese-covered bread slices. Place another cheese slice on top of the potato mixture, then cover with the second bread slice to complete the sandwich.

  7. 7.Pan-Fry the Sandwich

    Melt 1 tablespoon of butter in the same pan used for the onion mixture over medium-low heat. Place the assembled sandwich in the pan. Cook for approximately 2.5-3 minutes, pressing gently with a spatula, until the bottom is golden brown. Flip the sandwich and cook the other side for another 2.5-3 minutes until it's also golden brown and the cheese has melted.

    Once cooked, remove the sandwich from the pan. Cut it into halves or triangles and serve immediately.
