PONGAL RECIPE – South Indian Style

Ingredients

  • 1 cupRice
  • 1 cupYellow Moong Dal
  • 5-6 cupsWater
  • 2 tbspGhee
  • to tasteSalt

For Tempering

  • 1 tspCumin Seeds
  • 10-12 (slit)Cashews
  • 1 tspWhole Black Peppercorns
  • 2-3 (slit)Green Chillies
  • a few sprigsCurry Leaves
  • 1/4 tspHing (Asafoetida)
  • 1 tspGrated Ginger
  • 1-2 (optional)Dried Red Chilli

Step-by-Step Instructions

  1. 1.Prepare Rice and Dal

    Take 1 cup of rice and 1 cup of yellow moong dal. Soak them in water for 10 minutes, then wash thoroughly.

  2. 2.Cook Rice and Dal in Pressure Cooker

    Heat 1 tablespoon of ghee in a pressure cooker. Add the washed rice and moong dal to the cooker. Pour in 5-6 cups of water and add salt to taste. Mix well.

  3. 3.Pressure Cook

    Close the lid of the pressure cooker and cook for 3-4 whistles until the rice and dal are soft and mushy. Once cooked, open the lid and stir to achieve a smooth consistency. If it's too thick, you can add a little hot water.

  4. 4.Prepare Tempering

    In a separate pan, heat 1 tablespoon of ghee. Add cumin seeds, slit cashews, whole black peppercorns, slit green chilies, curry leaves, hing, grated ginger, and dried red chili (if using). Sauté until the cashews turn golden brown and the spices are fragrant.

  5. 5.Combine and Serve

    Pour the prepared tempering over the cooked pongal in the pressure cooker. Mix everything thoroughly. Serve hot.
