Add finely chopped onion, finely chopped green chili, finely chopped ginger, finely chopped curry leaves, and finely chopped coriander to a bowl. Add salt to taste and mix all the ingredients well until combined.
Heat a dosa pan or non-stick griddle. Pour 2 ladles of dosa batter onto the hot pan and spread it gently to form a thick pancake. Immediately, add a generous amount of the prepared onion topping onto the dosa batter. Gently press the topping into the batter using a spatula to ensure it sticks. Drizzle oil around the edges of the uttappam. Cover the pan with a lid and cook for 1 minute until the base is golden brown and the topping is slightly cooked.
Remove the lid and carefully flip the uttappam to cook the other side. Cover again and cook for another 1 minute until the topping is cooked and the uttappam is golden brown on both sides.
Once cooked, remove the Onion Uttappam from the pan and serve hot with coconut chutney or any chutney of your choice.
• Ensure the pan is hot before pouring the batter for a crispy uttappam.
• Press the topping gently into the batter so it adheres well when flipping.
• Adjust the amount of green chilies and ginger according to your spice preference.
• Add other finely chopped vegetables like carrots, bell peppers, or tomatoes for a mixed vegetable uttappam.
• Sprinkle grated cheese on top before covering for a cheesy variation.
• Serve with different chutneys like tomato chutney or peanut chutney.
