Okra Curry – Sri Lankan Style

Ingredients

  • 200gOkra
  • 1B Onions
  • 2Green chili
  • 3Garlic cloves
  • a fewCurry leaves
  • a fewPandan (Rampe) leaves
  • 2Cinnamon sticks
  • 1/4 tspFenugreek seeds
  • 1/4 tspTurmeric powder
  • 1 tspCurry powder
  • to tasteSalt
  • 1 1/2 cupsThin Coconut Milk
  • 1/2 cupThick Coconut Milk
  • 1 tspLime juice
  • for sprinklingCrushed mustard

Step-by-Step Instructions

  1. 1.Prepare the Okra

    Take 200g of okra and cut them lengthwise into bite-sized pieces. Set aside.

  2. 2.Combine Spices and Thin Coconut Milk

    In a clay pot, add 1 sliced onion, 2 green chilies (sliced), 3 garlic cloves (sliced), curry leaves, pandan leaves, 2 cinnamon sticks, 1/4 tsp fenugreek seeds, 1/4 tsp turmeric powder, 1 tsp curry powder, and salt to taste. Pour in 1 1/2 cups of thin coconut milk.

  3. 3.Cook Initial Mixture

    Stir the mixture well and cook over medium flame for 3-5 minutes until it starts to simmer and the onions soften slightly.

  4. 4.Add Thick Coconut Milk

    Pour in 1/2 cup of thick coconut milk and continue to cook for another 3-5 minutes, stirring occasionally, until the curry thickens slightly.

  5. 5.Add Okra and Cook

    Add the cut okra to the pot. Stir gently to combine with the curry. Cook without covering the pot until the okra is soft and tender, approximately 5-7 minutes. Do not overcook to maintain the okra's texture.

  6. 6.Finish the Curry

    Switch off the flame. Add 1 tsp of lime juice and stir. Sprinkle a little crushed mustard over the curry for added flavor and garnish.
