Follow each step to make the recipe successfully.
Take 200g of okra and cut them lengthwise into bite-sized pieces. Set aside.
In a clay pot, add 1 sliced onion, 2 green chilies (sliced), 3 garlic cloves (sliced), curry leaves, pandan leaves, 2 cinnamon sticks, 1/4 tsp fenugreek seeds, 1/4 tsp turmeric powder, 1 tsp curry powder, and salt to taste. Pour in 1 1/2 cups of thin coconut milk.
Stir the mixture well and cook over medium flame for until it starts to and the onions soften slightly.
Pour in 1/2 cup of thick coconut milk and continue to cook for another , stirring occasionally, until the curry thickens slightly.
Add the cut okra to the pot. Stir gently to combine with the curry. Cook without covering the pot until the okra is soft and tender, approximately . Do not overcook to maintain the okra's texture.
Switch off the flame. Add 1 tsp of lime juice and stir. Sprinkle a little crushed mustard over the curry for added flavor and garnish.
