Heat 1 tablespoon of vegetable oil in a fry pan or wok over medium heat. Add 2 teaspoons of crushed garlic and 2 teaspoons of crushed ginger, spreading them around the pan to release their aroma.
Add 500 grams of pork to the pan. Stir-fry for a couple of minutes until the meat changes color and is nicely broken up, ensuring there are no big lumps.
Pour in 2 tablespoons of soy sauce, 2 tablespoons of oyster sauce, and 2 tablespoons of freshly squeezed lime juice. Stir thoroughly to combine all the ingredients with the meat.
Add a 230-gram can of drained and roughly water chestnuts to the mixture. Stir-fry for another couple of minutes to heat them through and allow them to absorb the flavors.
Finally, add about 5 thinly chopped spring onions. Stir-fry for another until the spring onions are just combined and the mixture is fragrant.
Spoon the finished meat mixture into crisp iceberg lettuce cups. Garnish with a little extra fresh spring onion and serve immediately.
