Dabeli - Authentic Indian Street Food

Ingredients

For Dabeli Masala

  • 4 tbspsCoriander seeds
  • 1 tbspCumin
  • 1 tspBlack Peppercorns
  • 2 tspsFennel seeds
  • 2 pcsBlack Cardamom
  • 8-10 pcsCloves
  • 2 pcsBayleaf
  • 1 pcStar Anise
  • 2-3 pcsDried Kashmiri Red Chillies
  • 1-2 pcsCinnamon sticks
  • 1 tbspSesame seeds
  • 2 tbspsDried Coconut powder
  • 1/2 tspSalt
  • 1/2 tspBlack Salt
  • 1 tspKashmiri Red Chilli powder
  • 1 tspDry Mango powder

For Red Garlic Chutney

  • 2 tbspsKashmiri Red Chilli powder
  • 10-12 pcsGarlic pods
  • 2 tspsLemon juice
  • 1/2 tspSalt
  • as neededWater

For Tamarind Chutney Solution

  • 3-4 tbspsTamarind chutney
  • as neededWater

For Masala Peanuts

  • 1 tspOil
  • 1/2 cupRaw Peanuts
  • to tasteSalt
  • a littleRed Chilli powder
  • 1-2 tspsPrepared Dabeli masala

For Dabeli Filling

  • 1 tbspOil
  • 1 tspCumin
  • pinchAsafoetida
  • 2-3 tbspsPrepared Dabeli masala
  • 1-1.5 cupsWater
  • 6-7 pcsPeeled boiled Potatoes
  • 4-5 tbspsPrepared Tamarind Chutney solution
  • to tasteSalt

For Assembly & Garnishing

  • as neededDabeli Pav (buns)
  • as neededPrepared Tamarind Chutney solution
  • as neededPrepared Red Garlic chutney
  • as neededChopped Onion
  • as neededFresh Coriander
  • as neededPrepared Masala Peanuts
  • as neededPomegranate
  • as neededSev (fine chickpea noodles)
  • as neededButter

Step-by-Step Instructions

  1. 1.Prepare Dabeli Masala (Dry Roasting)

    In a pan, add 4 tbsps Coriander seeds, 1 tbsp Cumin, 1 tsp Black Peppercorns, 2 tsps Fennel seeds, 2 pcs Black Cardamom, 8-10 pcs Cloves, 2 pcs Bayleaf, 1 pc Star Anise, 2-3 pcs Dried Kashmiri Red Chillies, and 1-2 pcs Cinnamon sticks. Dry roast these spices on low-medium flame until they lose their aroma, about 2-3 minutes. Then, add 1 tbsp Sesame seeds and 2 tbsps Dried Coconut powder. Dry roast for another minute until fragrant. Switch off the flame and let it cool.

  2. 2.Grind Dabeli Masala

    Transfer the cooled dry roasted mixture into a grinder. Add 1/2 tsp Salt, 1/2 tsp Black Salt, 1 tsp Kashmiri Red Chilli powder, and 1 tsp Dry Mango powder. Grind these ingredients well to form a coarse yet fine powder.

  3. 3.Prepare Red Garlic Chutney

    In a blender, add 2 tbsps Kashmiri Red Chilli powder, 10-12 pcs Garlic pods, 2 tsps Lemon juice, and 1/2 tsp Salt. Add water as needed and blend nicely until a smooth red garlic chutney is formed.

  4. 4.Prepare Tamarind Chutney Solution

    In a bowl, take 3-4 tbsps Tamarind chutney. Add water and dilute it to a pourable consistency, whisking well.

  5. 5.Prepare Masala Peanuts

    In a pan, add 1 tsp Oil. Once heated, add 1/2 cup Raw Peanuts. Roast these well until they get a good oily coating and start to brown slightly. Add salt to taste, a little Red Chilli powder, and 1-2 tsps of the prepared Dabeli masala. Mix and cook for 1-2 minutes on low-medium flame until the masala coats the peanuts well. Keep aside.

  6. 6.Prepare Dabeli Filling

    In a pan, take 1 tbsp Oil. Once heated, add 1 tsp Cumin and a pinch of Asafoetida. Then add 2-3 tbsps of the prepared Dabeli masala and toss well until it forms a paste with the oil. Add 1-1.5 cups Water and let it simmer. Next, add 6-7 pcs Peeled boiled Potatoes (crushed) over the masala mixture. Over this, add 4-5 tbsps of the prepared Tamarind Chutney solution. Mix and cook for 4-5 minutes so that everything combines well with the gravy. Once mixed, start mashing it with a masher to get a perfect soft and smooth texture. Adjust salt at this stage. Mix and cook it well until the Dabeli filling is soft and smooth.

  7. 7.Garnish Dabeli Filling

    Remove the Dabeli filling into a plate and spread it evenly. Garnish with fresh grated Coconut, fresh Coriander, prepared Masala Peanuts, and Pomegranate seeds.

  8. 8.Assemble Dabeli

    Take a Dabeli Pav and cut it open partially. Spread a generous amount of Tamarind Chutney solution on the inside. Then, spread the prepared Red Garlic chutney. Scoop a portion of the Dabeli filling and add it between the pav. Garnish with some masala peanuts, chopped onion, and coriander. Scoop another portion of the stuffing and add it. Smear some Tamarind chutney solution again and then garlic chutney, layering it evenly.

  9. 9.Toast and Serve

    Heat a pan and add butter. As soon as it melts, add the prepared Dabeli. Toast it well from all sides until golden brown. Garnish it lastly with some Sev. Serve with some Onions and masala Peanuts.

Follow each step to make the recipe successfully.

    Prepare Dabeli Masala (Dry Roasting)
