Take 4 medium-sized potatoes. Peel their skin using a peeler and then slice them into thin, round pieces using a knife.
Place the sliced potatoes in a bowl and wash them thoroughly with water two to three times to remove excess starch.
Heat 2 tablespoons of oil in a pan on medium flame. Once the oil is hot, add 1/2 tablespoon of mustard seeds, 1/2 tablespoon of cumin seeds, and 1/2 tablespoon of sesame seeds. Let them splutter for a few seconds.

Remove the lid and stir the potatoes. Continue cooking for another , stirring occasionally, until they start to turn golden brown and crispy.
Add 1/2 tablespoon of chili flakes, 1/2 tablespoon of black pepper powder, and 1 tablespoon of dry mango powder (amchur) to the pan. Stir everything together thoroughly to ensure the spices are well distributed.
Cook for an additional , stirring continuously, until the potatoes are perfectly crispy and coated with all the flavors. Turn off the flame and serve hot.
