Creamy Mushroom Sauce (Vegan)

For Creamy Mushroom Sauce

  • 3 TbspOlive Oil
  • 100g / 3/4 cupRed Onion (diced)
  • 20g / 2 TbspGarlic (minced)
  • 1/4 TspChili Flakes
  • 1+1/2 TbspTomato Paste
  • 450 to 460gWhite Mushroom (sliced)
  • to tasteSalt
  • 2 TbspFresh Thyme
  • 1/2 TspGround Black Pepper
  • 12g / 1 TbspAll Purpose Flour (Regular or Gluten-free)
  • 175ml / 3/4 cupVegetable Broth
  • 3 TbspCream (Plant-based)
  • to taste (optional)Black Pepper
  • 6g / 1 TbspParsley

For Serving with Pasta

  • 225gLinguine Pasta
  • 1/4 cupParmesan (plant-based)
  • to tasteGround Black Pepper
  • DrizzleOlive Oil

Step-by-Step Instructions

  1. 1.Prepare Ingredients

    Slice the white mushrooms, mince the garlic, dice the red onion, and chop the fresh parsley and thyme.

  2. 2.Sauté Onions

    Heat 3 tablespoons of olive oil in a pan over medium heat. Add the 100g (3/4 cup) of diced red onion and fry until soft, which takes about 3 to 4 minutes.

  3. 3.Add Garlic and Chili Flakes

    Add 20g (2 tablespoons) of minced garlic and 1/4 teaspoon of chili flakes to the pan. Fry on medium-low heat for 1 minute or until fragrant, stirring constantly to prevent burning.

  4. 4.Cook Tomato Paste

    Add 1+1/2 tablespoons of tomato paste to the mixture. Fry on medium heat for about 1 minute, stirring to combine with the other ingredients.

  5. 5.Cook Mushrooms

    Add 450-460g of sliced white mushrooms, salt to taste, 2 tablespoons of fresh thyme, and 1/2 teaspoon of ground black pepper to the pan. Fry while switching between medium and medium-high heat until the water from the mushrooms has evaporated, which takes about 6 minutes.

  6. 6.Add and Cook Flour

    Sprinkle 12g (1 tablespoon) of all-purpose flour (regular or gluten-free) over the mushrooms. Fry on medium heat for about 2 minutes to cook out the raw flavor of the flour, stirring well.

  7. 7.Add Broth and Bring to Boil

    Pour in 175ml (3/4 cup) of vegetable broth. Mix thoroughly until all the flour is mixed into the broth and bring the mixture to a boil.

  8. 8.Simmer Sauce

    Cover the pan and cook on low heat for about 5 to 6 minutes, allowing the flavors to meld and the sauce to thicken slightly.

  9. 9.Add Cream

    Uncover the pan and add 3 tablespoons of plant-based cream. Cook on medium-low heat for another 1 minute or so, stirring until the cream is fully incorporated and the sauce is creamy.

  10. 10.Final Seasoning

    Turn off the heat. Add black pepper to taste (optional) and 6g (1 tablespoon) of fresh parsley. Stir to combine.

  11. 11.Cook Pasta

    While the sauce is simmering, cook 225g of linguine pasta according to package directions until al dente. Drain the pasta well.

  12. 12.Season Pasta

    Transfer the cooked linguine pasta to a bowl. Add 1/4 cup of plant-based Parmesan, ground black pepper to taste, and a drizzle of olive oil. Toss well to coat the pasta.
