Ingredients

Muffin Batter

  • 200 mlMilk
  • 2Eggs
  • 100 gSugar
  • 100 mlVegetable Oil
  • 3 tbspCocoa Powder
  • 1 tbspCinnamon
  • 250 g (or as needed for homogeneous mixture)All-purpose Flour
  • 10 g (1 packet)Baking Powder

Step-by-Step Instructions

  1. 1.Combine Wet Ingredients

    Pour 200ml of milk into a mixing bowl. Add 2 eggs and 100g of sugar to the bowl.

  2. 2.Whisk Initial Mixture

    Whisk the milk, eggs, and sugar together until well combined and the sugar is mostly dissolved.

  3. 3.Add Oil

    Pour 100ml of vegetable oil into the mixture and continue whisking until fully incorporated.

  4. 4.Add Cocoa and Cinnamon

    Add 3 tablespoons of cocoa powder and 1 tablespoon of cinnamon to the wet mixture. Whisk thoroughly until the cocoa and cinnamon are completely blended and there are no lumps.

  5. 5.Incorporate Flour and Baking Powder

    Gradually add approximately 250g of all-purpose flour along with 10g (one packet) of baking powder to the mixture. Continue mixing until the batter becomes homogeneous and smooth. Add more flour if needed to reach the desired consistency.

  6. 6.Add Optional Mix-ins

    If desired, add chopped walnuts, hazelnuts, or chocolate chips to the batter. Gently fold them in until evenly distributed.

  7. 7.Prepare for Baking

    Line a muffin tin with paper liners. Spoon the batter into each liner, filling them about two-thirds full.

  8. 8.Bake Muffins

    Preheat your oven to 180°C (350°F). Bake the muffins for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Let them cool slightly before serving.
