  • 500 gCarrots
  • 1 tbspGhee
  • 1 literMilk (full fat)
  • 1/2 cupSugar
  • 1/4 cupMixed Dry Fruits (cashews, pistachios, raisins)
  • 1/2 cupMakhana (Fox Nuts)
  • 3-4Green Cardamom Pods

Step-by-Step Instructions

  1. 1.Prepare the Carrots

    Wash and peel the carrots, then grate them finely. Set aside.

  2. 2.Sauté the Carrots

    Heat 1 tablespoon of ghee in a heavy-bottomed pot over medium heat. Add the grated carrots and sauté for 5-7 minutes until they soften slightly and their raw smell disappears.

  3. 3.Add Milk and Simmer

    Pour 1 liter of full-fat milk into the pot with the sautéed carrots. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20-25 minutes, stirring occasionally, until the milk thickens and the carrots are fully cooked.

  4. 4.Add Sugar and Dry Fruits

    Once the kheer has thickened, add 1/2 cup of sugar and the mixed dry fruits (cashews, pistachios, raisins) to the pot. Stir well to combine.

  5. 5.Incorporate Makhana

    Add 1/2 cup of makhana (fox nuts) to the kheer. Continue to simmer for another 5-7 minutes, stirring gently, allowing the makhana to soften and absorb the flavors.

  6. 6.Add Cardamom

    Finally, add 3-4 green cardamom pods to the kheer for aroma. Stir once more and remove from heat.

  7. 7.Serve

    Serve the Gajar Kheer warm or chilled. Enjoy this rich and creamy Indian dessert.
