Follow each step to make the recipe successfully.
Take the butterfly pea flowers in a bowl, add water, and gently rinse them to remove any bugs or ants. Set them aside.
Add 4 cups of water to a saucepan and place it on the stove over medium heat. Bring the water to a boil.
Take 5 of the rinsed butterfly pea flowers and carefully remove the green part (calyx) from each flower. Add the prepared flowers, 1 small cinnamon stick, and a small piece of ginger to the boiling water.
Stir the mixture gently and let it boil for . You will notice the water turning a vibrant blue color as the flowers release their pigment.
Turn off the heat, cover the saucepan with a lid, and let the tea steep for to allow the flavors and color to fully develop.
Add 1 teaspoon of honey to a heat-proof cup. Place a fine-mesh strainer over the cup and strain the hot butterfly pea flower tea into it. Stir well to dissolve the honey. Serve hot with a lemon wedge on the side.
For a cold version, add 1 teaspoon of honey to a glass. Strain the blue tea into the glass and stir. Add ice cubes to chill. Serve cold with a lemon wedge.
Squeeze the lemon wedge into either the hot or cold tea. Observe as the tea dramatically changes color from blue to a beautiful purple due to the change in pH.
