Take 10 pieces of bread and cut them into round shapes. Using a smaller cutter or a small bowl, impress a small circle in the middle of each round bread slice to create a ring. Carefully remove the middle part of the bread, leaving a bread ring and a solid bread base.
Heat a pan and add 1 tablespoon of salted butter. Once the butter melts, add 1/2 cup of finely chopped onion, 1/2 cup of finely chopped carrot, 1/2 cup of finely chopped beans, 1/2 cup of finely chopped bell pepper (capsicum), and 4-5 chopped garlic cloves. Mix all the ingredients well and cook for 5 to 7 minutes until the vegetables are slightly softened but still retain a slight crunch.
To the sautéed vegetables, add salt to taste, 1 teaspoon of black pepper powder, and 1 teaspoon of sugar. Mix again to combine the spices. Pour in 1 tablespoon of milk and add 1 teaspoon of corn flour. Mix continuously until the corn flour thickens the mixture and all ingredients are well combined into a creamy stuffing. Once thickened, switch off the gas flame.
After switching off the flame, add 1 tablespoon of mayonnaise to the hot vegetable mixture. Mix well until the mayonnaise is fully incorporated and the stuffing is creamy. The stuffing for the baked ring sandwiches is now ready.
Take one of the solid round bread bases and apply a thin layer of butter on top. Place a prepared bread ring on top of the buttered bread base. Fill the hollow gap in the bread ring generously with the prepared creamy vegetable stuffing. Top the stuffing with a good amount of grated cheese.
Arrange the assembled ring sandwiches on a baking tray. Place the tray in a preheated oven and bake at 180°C (350°F) for 15 to 20 minutes, or until the cheese is melted, bubbly, and slightly golden brown, and the bread rings are toasted.
Once baked, carefully remove the hot ring sandwiches from the oven. Transfer them to a serving plate. Garnish each sandwich with a small dollop of ketchup and a fresh mint leaf. Serve immediately as a delicious snack or appetizer.
