  • 1 tspCoriander Powder
  • 1 tspKashmiri Chilli Powder
  • to taste (approx. 1/2 tsp)Salt

For the Tempering (Tadka)

  • 2-3 tbspMustard Oil
  • 1 tspCumin Seeds

Step-by-Step Instructions

  1. 1.Prepare the Chutney Base

    Add the quartered red onion, garlic cloves, and green chillies into a mortar. Then add the chopped fresh coriander leaves, coriander powder, Kashmiri chilli powder, and salt to taste.

  2. 2.Mash the Ingredients

    Using a pestle, mash all the ingredients together until they form a coarse, rustic paste. Continue mashing until the onions and garlic are well broken down and the flavors are combined, about 2-3 minutes.

  3. 3.Prepare the Tempering (Tadka)

    In a small pan, heat mustard oil over medium heat. Once the oil is hot, add cumin seeds and let them splutter and turn fragrant, about 30-45 seconds.

  4. 4.Combine and Serve

    Pour the hot tempering (tadka) directly over the mashed chutney in the mortar. Mix well with a spoon to incorporate the oil and cumin seeds into the chutney. Serve immediately with parathas or as a side dish.
