  • 1 tspKasuri Methi
  • 2-3Slit Green Chilli
  • 2 tbspCoriander Leaves

For Curd Mixture

  • 1/2 cupCurd
  • 1/2 tspTurmeric Powder
  • 1 tspRed Chilli Powder
  • 1/2 tspCumin Powder

Step-by-Step Instructions

  1. 1.Fry Paneer

    Heat 2 tablespoons of oil in a pan. Add 250 grams of paneer cubes and fry them until they turn golden brown on all sides. Once done, remove the paneer and set aside.

  2. 2.Sauté Whole Spices and Onions

    In the same pan, add 1 tablespoon of ghee to the remaining oil. Add whole spices: 1 bay leaf, 1 inch cinnamon stick, 1 black cardamom, and 1/2 teaspoon of cumin seeds. Let them splutter. Then, add 1 cup of chopped onion and cook until it turns golden brown.

  3. 3.Add Ginger Garlic Paste and Tomatoes

    Add 1 tablespoon of ginger garlic paste to the pan and cook for 2 minutes until the raw smell disappears. Next, add 1 cup of grated tomato and salt as per taste. Cook this mixture for 3 minutes, stirring occasionally.

  4. 4.Prepare Curd Masala Mixture

    In a separate bowl, take 1/2 cup of curd. Add 1/2 teaspoon of turmeric powder, 1 teaspoon of red chili powder, and 1/2 teaspoon of cumin powder. Whisk it nicely until smooth and well combined.

  5. 5.Cook the Gravy Base

    Add the prepared curd masala mixture to the pan with the onion and tomato base. Mix well and cook for 3 minutes, ensuring the spices are well incorporated and the oil starts to separate.

  6. 6.Simmer the Gravy

    Add approximately 1/2 cup of water to the gravy for desired consistency. Stir in 1 teaspoon of kasuri methi. Mix everything and let it boil for 2 minutes.

  7. 7.Add Paneer and Finish

    Add the fried paneer cubes to the simmering gravy. Mix gently and cook for 5 minutes, allowing the paneer to absorb the flavors. Finally, add slit green chilies and fresh coriander leaves. Give it a final mix and turn off the flame.
