Vegetarian Lasagna with Ricotta and Spinach - Italian Style

Ingredients

Vegetables

  • 4 smallMarrows (Zucchini)
  • 2Carrots
  • 1Onion
  • 3 clovesGarlic
  • 200 gSpinach

Sauce & Filling

  • 400 gTomato Polpa
  • a few leavesFresh Basil
  • 400 gRicotta
  • 250 gFresh Milk
  • 12-15Lasagna Sheets
  • 150 gParmesan Cheese
  • as neededOlive Oil
  • to tasteSalt
  • to tastePepper

Step-by-Step Instructions

  1. 1.Prepare Marrows

    Cut the marrows into thin slices.

  2. 2.Prepare Carrots

    Peel the carrots and then slice them into thin layers using a peeler.

  3. 3.Fry Marrows

    Heat a pan with a little olive oil. Add the marrow slices and fry them until they are lightly browned on both sides. Remove and set aside in a bowl.

  4. 4.Cook Carrots

    In the same pan, add the carrot slices and cook them until they are soft. Remove and set aside in a bowl.

  5. 5.Cook Spinach

    Add 200g of spinach to the pan and cook until it wilts completely. Remove and set aside in a bowl.

  6. 6.Chop Garlic and Onion

    Chop the garlic cloves and the onion very finely.

  7. 7.Prepare Tomato Sauce

    Heat a pan with olive oil. Add the finely chopped onion and garlic and fry until softened. Season with salt and pepper. Add 400g of tomato polpa and simmer for about 30 minutes, stirring occasionally.

  8. 8.Add Fresh Basil to Sauce

    Once the tomato sauce has simmered, add some fresh basil leaves and stir them in.

  9. 9.Prepare Ricotta Mixture

    In a large bowl, add 400g of ricotta. Mash it lightly with a fork. Add the cooked spinach and 250g of fresh milk. Mix well until all ingredients are combined.

  10. 10.Cook Lasagna Sheets

    Bring a pot of water to a boil and add 1 teaspoon of salt. Cook the lasagna sheets one at a time for about 2 minutes each, or until al dente. Remove and set aside.

  11. 11.Assemble Lasagna - First Layer

    Add a little olive oil to the bottom of a lasagna dish. Spread a thin layer of tomato sauce. Place lasagna sheets over the sauce. Arrange a layer of fried marrow slices on top of the lasagna sheets. Sprinkle with Parmesan cheese.

  12. 12.Assemble Lasagna - Second Layer

    Spread a layer of the ricotta and spinach mixture over the Parmesan cheese. Add another layer of tomato sauce. Place more lasagna sheets on top.

  13. 13.Assemble Lasagna - Third Layer

    Arrange a layer of cooked carrot slices over the lasagna sheets. Sprinkle with Parmesan cheese. Spread another layer of the ricotta and spinach mixture. Add another layer of tomato sauce. Place more lasagna sheets on top.

  14. 14.Assemble Lasagna - Fourth Layer

    Arrange a layer of fried marrow slices over the lasagna sheets. Sprinkle with Parmesan cheese. Spread another layer of the ricotta and spinach mixture. Add another layer of tomato sauce. Place more lasagna sheets on top.

  15. 15.Assemble Lasagna - Top Layer

    Spread the remaining ricotta and spinach mixture evenly over the top layer of lasagna sheets. Sprinkle generously with Parmesan cheese. Drizzle olive oil over the top.

  16. 16.Bake Lasagna

    Bake the lasagna in a preheated oven at 200°C (392°F) for 40 minutes, or until golden brown and bubbly.

    Let the lasagna rest for a few minutes before slicing and serving. Garnish with fresh basil if desired. Bon appetit!
