Follow each step to make the recipe successfully.
In a bowl, combine 2 tablespoons of tom yum paste, 1/2 teaspoon of sugar, a little seasoning powder, and 1 tablespoon of fish sauce. Mix well until all ingredients are thoroughly combined. Optionally, you may add 1 teaspoon of water to achieve desired consistency.
Add the prepared tom yum paste mix to 1 bowl of cooked rice. Mix thoroughly until the rice is evenly coated with the paste and has a uniform color.
Heat a little oil in a pan over medium-high heat. Pour in the beaten egg and soft scramble it. Once cooked, remove the scrambled egg from the pan and set it aside.
Add a little more oil to the same pan. Add the chicken chunks and them until they are golden brown on all sides.
Add the tom yum-coated rice to the pan with the chicken. Cook on medium-high flame, stirring continuously to ensure the rice heats through and combines with the chicken.
Once the rice is heated, add the red chili padi, lemongrass, kaffir lime leaves, and the previously scrambled egg to the pan. Mix all ingredients well with the rice.
Turn off the flame. Serve the Tom Yum Fried Rice immediately, garnished with fresh lime slices, cucumber slices, and cherry tomatoes on the side.
