Mince 5 cloves of garlic and 1.5 tablespoons of ginger. Peel the ginger using the edge of a spoon. Slice half a medium onion.
Crack 2 large eggs into a bowl. Add 1/2 teaspoon of sugar, 1 tablespoon of soy sauce, and 1/2 teaspoon of Hondashi powder. Whisk thoroughly with a fork until well combined.
Heat a wok or large sauté pan over high heat. Add 1 tablespoon of avocado oil. Once hot, pour the whisked egg mixture into the wok. Scramble the eggs quickly until just set, then remove them from the wok and chop into small pieces. Set aside.
Add another 1 tablespoon of avocado oil to the hot wok. Add the sliced onion and water chestnuts. Sauté for until the onions are slightly softened and translucent.
Chop 8 ounces of leftover ribeye steak into small, bite-sized pieces, removing any excess fat or gristle. Add the chopped steak to the wok with the onions and chestnuts. Stir-fry for until the steak is heated through and slightly browned.
Add the minced ginger and garlic to the wok. Stir-fry for about until fragrant. Add 1/2 cup of shelled edamame and any leftover steak juice from the container. Continue to stir-fry for another minute.
Chop one green onion stalk into small pieces and add it to the wok. Stir-fry for to allow it to slightly sear.
Add 3 cups of day-old cooked rice to the wok. Use a wooden spoon to break up any clumps and mix it thoroughly with the other ingredients. Continue stir-frying for , ensuring the rice is heated through and slightly toasted.
Pour in 2 tablespoons of soy sauce, 1.5 tablespoons of oyster sauce, 1 teaspoon of toasted sesame oil, and 1/4 teaspoon of white pepper. Stir vigorously to evenly distribute all the seasonings and coat the rice.
Add the chopped scrambled egg back into the wok. Mix gently until the egg is well incorporated into the fried rice.
Remove the wok from the heat. Serve the steak fried rice in individual bowls. Garnish with the remaining sliced green onion and a final drizzle of 1/2 teaspoon of toasted sesame oil for extra flavor. Enjoy!
