Follow each step to make the recipe successfully.
Boil water in a pot. Add soya chunks and cook for . Drain the water and squeeze out all excess water from the soya chunks.
Transfer the squeezed soya chunks to a bowl. Crack 2 eggs over the soya. Add 1/2 tsp salt, 1/2 tsp red chili powder, 1/4 tsp turmeric powder, and 1/2 tsp ginger-garlic paste.
Add 2 tablespoons of gram flour (besan) to the soya mixture. Mix thoroughly with a spoon until all soya chunks are well-coated with the egg and spice mixture. The egg liquid will absorb the flour.
Place the soya mixture in a small, heat-proof bowl. Place this bowl inside a steamer (or a pot with a perforated plate and water). Cover and for on medium flame after the water starts boiling.
In a mixer jar, add 1 chopped large onion, a small piece of cinnamon, 2 cloves, 1/2 tsp black pepper, 1/2 tsp fennel seeds, and 1/2 tsp cumin seeds. Grind to a coarse paste without adding any water.
Heat 2 tablespoons of cooking oil in a pan. Add 1/2 tsp ginger-garlic paste and until its raw smell disappears and it turns slightly golden.
Add the coarsely ground onion-spice paste to the pan. for on medium flame until the raw smell of the onions and spices is gone.
Add 1/2 tsp red chili powder, 1/4 tsp coriander powder, and 1/4 tsp garam masala to the pan. Mix well and in the oil for a few seconds.
Pour in the pureed tomatoes (2 tomatoes blended without water). Mix thoroughly with the spices.
Cover the pan and cook until the tomato paste thickens and the oil separates from the masala, indicating it's well-cooked.
Remove the soya from the steamer. Check if it's cooked by touching it; it should not be sticky. The soya chunks will be nicely coated and separated.
Add the soya chunks to the cooked tomato masala in the pan. Mix everything well, ensuring the soya chunks are evenly coated with the masala.
Cover the pan and cook for another to allow the soya to absorb the flavors of the masala.
Uncover the pan. Add a handful of chopped mint leaves and coriander leaves. Mix well. The Soya Egg Fry is ready to serve. It can be enjoyed as a dry dish, with chapati, rice, or as a side dish.
