Heat 1 Tsp of oil in a pan. Add 1 small sliced onion and stir fry for until it begins to soften. Then add 1 small sliced capsicum and 2 Tbsp of grated carrot. Continue to stir fry until all vegetables are softened. Season with a pinch of salt and a pinch of black pepper powder, then stir well. Remove from heat and set aside.
In a bowl, add 1/2 cup of semolina (rava/sooji) and 1 cup of lukewarm water. Mix well until combined. Cover the bowl and let the semolina rest for to soften.
Take 2 round buns. Carefully cut each bun lengthwise into four long pieces, as shown in the video. Set the cut bun pieces aside.
After , uncover the semolina batter and mix it again. It should have a flowing consistency. Add chopped fresh coriander leaves, 1 small chopped tomato, 1 Tsp cumin seeds, 1 Tbsp red chili flakes (to taste), 1 Tsp coriander powder, a pinch of carom seeds, a pinch of turmeric powder, red chili powder (to taste), and salt (to taste). Mix all ingredients thoroughly. Add a little water if needed to achieve a thick, flowing batter consistency.
Dip each bun piece into the prepared semolina and vegetable batter, ensuring it is well coated on all sides. Heat 2 Tbsp of oil in a pan over medium-low flame. Place the coated bun pieces in the pan. Cook for on one side until golden brown, then flip and cook the other side. Continue cooking on medium-low flame, flipping occasionally, until both sides are golden brown and crispy.
Once the semolina bread are golden brown and crispy, remove them from the pan. Serve hot with your favorite sauce or chutney.
