Add the thinly sliced big onions, chopped green chillies, cumin, salt, chilli powder, chopped coriander leaves, and mustard oil to a large mixing bowl. Mix all ingredients thoroughly by hand for about , pressing gently to help the onions release their moisture.
Add 1/2 cup of rice flour to the onion mixture. Continue mixing by hand for about , ensuring the flour is evenly distributed and coats the onions.
Pour in 2 tablespoons of water. Mix again for about until a thick, cohesive batter forms that can be easily shaped into fritters.
Take small portions of the mixture and gently flatten them between your palms to form round, disc-shaped fritters.
Heat oil in a pan over medium heat. Once the oil is medium-heated, carefully place the shaped fritters into the hot oil. Fry in batches, ensuring not to overcrowd the pan. Cook for on each side until they turn golden brown and crispy.
Once the fritters are golden brown and cooked through, remove them from the oil using a slotted spoon. Place them on a plate lined with paper towels to drain any excess oil.
Serve the hot and crispy onion fritters immediately with your favorite green chutney and tomato ketchup.
