  • 8-10Curry Leaves
  • 0.25 cupWater
  • 1 tspSugar

Step-by-Step Instructions

  1. 1.Combine Dry Ingredients

In a large bowl, add 2 cups of sooji (semolina) and 2 cups of besan (gram flour).

  2. 2.Add Wet Ingredients and Seasonings

Pour in 2 cups of curd (yogurt). Add approximately 1 teaspoon of salt, 1 teaspoon of sugar, and 1/2 teaspoon of turmeric powder. Mix all ingredients thoroughly until well combined.

  3. 3.Adjust Batter Consistency and Rest

Gradually add water to the mixture, mixing continuously, until a smooth, thick batter consistency is achieved. Let the batter rest for 5 minutes to allow the sooji to swell.

  4. 4.Prepare Idli Maker

While the batter rests, add water to the base of an idli maker and bring it to a boil. Lightly grease the idli plates with oil to prevent sticking.

  5. 5.Add Eno to Batter

Just before steaming, add one sachet of Eno fruit salt to the batter. Mix gently until the Eno is fully incorporated and the batter becomes light and frothy.

  6. 6.Pour Batter into Molds

Carefully pour the prepared batter into the greased idli molds, filling each mold about three-quarters full.

  7. 7.Steam the Idlis

Place the filled idli plates into the idli maker. Cover and steam for 15 minutes on a medium to low flame until the idlis are cooked through and firm. You can check for doneness by inserting a knife or toothpick; it should come out clean.

  8. 8.Remove Idlis from Molds

Once cooked, carefully remove the idli plates from the steamer. Allow them to cool slightly before gently scooping out the dhokla idlis using a spoon or knife.

  9. 9.Prepare the Tempering

In a small pan, heat 2 tablespoons of mustard oil. Add 1 teaspoon of mustard seeds, 1-2 dry red chilies, and 8-10 curry leaves. Sauté until the mustard seeds splutter and the curry leaves become fragrant.

  10. 10.Add Water and Sugar to Tempering

Pour in 1/4 cup of water and add 1 teaspoon of sugar to the tempering mixture. Bring it to a boil, allowing the sugar to dissolve and the flavors to meld.

  11. 11.Pour Tempering Over Idlis and Serve

Arrange the steamed dhokla idlis on a serving plate. Pour the hot tempering evenly over all the idlis. Serve immediately and enjoy your instant dhokla idlis.
