In a mixing bowl, combine 3 tablespoons of atta (whole wheat flour), 1 tablespoon of ragi flour, 1/4 teaspoon of salt, and 1/2 teaspoon of oil. Mix these dry ingredients well with your hands for about 15 seconds.
Gradually add water to the mixture and knead thoroughly. Continue kneading for about 1-2 minutes, pressing with your fingers and palm, until a soft, pliable, and smooth dough is formed. The dough should absorb water well to ensure soft rotis.
Let the dough rest for about 5 minutes. After resting, divide the dough into three equal portions and roll each into a smooth ball.
Dust a clean surface with a little flour. Take one dough ball, flatten it slightly, and then use a rolling pin to roll it out evenly into a thin, round roti. Ensure it's not too thick or too thin.
Heat a tawa (griddle) on medium heat. Place the rolled roti on the hot tawa. Cook each side slightly for about 30 seconds without oil, until small bubbles appear and the color changes slightly. Then, drizzle about 1/2 teaspoon of oil (like sesame oil or ghee) around the edges and on top of the roti. Cook both sides for 1-2 minutes each, pressing gently with a spatula, until golden brown spots appear and the roti is fully cooked. Remove from the tawa and let it cool slightly on a plate.
Take one slightly cooled roti. Spread about 1 tablespoon of Lion Dates Syrup evenly over the entire surface of the roti. Carefully roll the roti tightly from one end to the other. Once rolled, cut it into two equal pieces.
Take another slightly cooled roti. Spread about 1 tablespoon of creamy peanut butter evenly over the entire surface of the roti. Carefully roll the roti tightly from one end to the other. Once rolled, cut it into two equal pieces.
Arrange the prepared date syrup and peanut butter rolls neatly into a lunchbox. These healthy and unique rolls are now ready to be enjoyed!
• Knead the dough thoroughly with water until it's soft and pliable for best results.
• Allow the cooked rotis to cool slightly before applying spreads to prevent them from melting too quickly.
• Substitute date syrup or peanut butter with honey for a different sweet option.
• Use chocolate syrup for a treat, or a savory filling like mashed potatoes for a different kind of roll.
