  • 1 tbspGinger-Garlic Paste
  • 1 large, choppedTomatoes
  • 1 cup, choppedGreen Beans
  • 1/2 cup, choppedCarrots
  • 1 medium, choppedPotatoes
  • 1/2 tspTurmeric Powder
  • 2 tbspBiryani/Pulao Masala
  • to tasteSalt
  • 150g, cubedPaneer
  • 1.5 cups, washedRice
  • 2 tbsp, choppedFresh Coriander/Mint Leaves
  • 3 cupsWater

Step-by-Step Instructions

  1. 1.Prepare Ingredients

    Chop onions, tomatoes, green beans, carrots, and potatoes. Cube the paneer and keep curry leaves ready.

  2. 2.Sauté Whole Spices

    Heat oil in a pressure cooker. Add bay leaf, star anise, cardamom pods, cloves, black peppercorns, and cumin seeds. Sauté for about 30 seconds until fragrant.

  3. 3.Add Onions

    Add the sliced onions to the cooker and sauté until they turn translucent, about 3-4 minutes.

  4. 4.Add Ginger-Garlic Paste

    Add ginger-garlic paste and sauté for 1 minute until its raw smell disappears.

  5. 5.Add Tomatoes

    Add the chopped tomatoes and cook for 2-3 minutes until they soften.

  6. 6.Add Vegetables

    Add the chopped green beans, carrots, and potatoes to the cooker. Mix well with the sautéed ingredients.

  7. 7.Add Powdered Spices and Salt

    Add turmeric powder, biryani/pulao masala, and salt to taste. Stir thoroughly to coat all the vegetables and spices.

  8. 8.Add Paneer

    Gently add the paneer cubes to the mixture and mix carefully to avoid breaking them.

  9. 9.Add Rice and Water

    Add the washed rice, fresh coriander/mint leaves, and 3 cups of water. Stir everything together gently.

  10. 10.Pressure Cook

    Close the pressure cooker lid and cook for 2-3 whistles on medium heat. Allow the pressure to release naturally.

    Once the pressure is released, open the cooker, fluff the pulao with a fork, and serve hot with a cup of tea or your preferred side dish.
