Take 1 kg of beef, cut into small pieces. Add 5 tablespoons of ginger-garlic paste and 1.5 tablespoons of turmeric powder to the beef.
Close the pressure cooker and cook for 5 whistles until the beef is tender. Reserve the broth for later use.
Heat 3 tablespoons of oil in a pan. Add 1 teaspoon each of whole spices (cinnamon, cloves, cardamom) and 2 pandan leaves. for a few seconds. Add 1 large sliced onion and on low flame for until it changes color.
Add 1 large chopped tomato and 2 green chilies to the pan. until the tomato becomes juicy.
Add 2 tablespoons of ginger-garlic paste and on low flame for until the raw smell disappears. Add 1.5 tablespoons of chili powder and 0.5 tablespoon of turmeric powder. well in oil until the spices are fragrant and the oil separates.
Add the pressure-cooked beef pieces (without the broth) to the masala. Mix well to coat the beef with the spices.
Add 1 tablespoon of cumin powder, 1 tablespoon of pepper powder, and 1 tablespoon of salt (or to taste). Mix thoroughly.
Add 2 tablespoons of thick curd to the beef mixture. Mix well until combined.
Pour 1 cup of the reserved beef broth (from pressure cooking) into the pan. Mix well.
Cover the pan and let it for on high flame, allowing the flavors to meld and the raw smell of spices to dissipate.
Add 1.5 tablespoons of coriander powder and mix thoroughly into the gravy.
Add 2 tablespoons of ground coconut paste. Mix well and bring the gravy to a boil.
Once the gravy comes to a boil, sprinkle finely chopped coriander leaves on top. Turn off the gas. The tasty Kerala-style beef gravy is now ready to serve.
