Ingredients

  • 1 tablespoonLight Soy Sauce
  • 2 tablespoonsDark Soy Sauce
  • 1 teaspoonSalt

Step-by-Step Instructions

  1. 1.Cook the Rice

    Cook 500 grams of rice. It's recommended to cook the rice in a rice cooker and ensure it's dry and cooled before proceeding to prevent it from becoming mushy during frying.

  2. 2.Prepare Egg-Coated Rice

    Beat 4 eggs in a bowl. Add 1 tablespoon of cooking oil to the beaten eggs and mix well. Pour this egg-oil mixture over the cooked rice in a large bowl. Mix thoroughly with a spoon or spatula until all rice grains are evenly coated in the egg mixture.

  3. 3.Fry Spring Onion

    Warm up a pan or wok and add 2 tablespoons of cooking oil. Add the chopped spring onion and stir-fry for 2 minutes until it becomes fragrant.

  4. 4.Stir-fry Rice

    Add the egg-coated rice into the frying pan with the spring onion. Keep stirring and frying for about 5 minutes until the egg starts to 'pop' on the rice, indicating it's cooking and the rice is heated through and slightly toasted.

  5. 5.Add Seasonings

    Add 2 tablespoons of cooking alcohol, 1 tablespoon of light soy sauce, 2 tablespoons of dark soy sauce, and 1 teaspoon of salt to the rice in the pan.

  6. 6.Final Stir-fry

    Mix the rice and all the added sauces thoroughly, continuing to stir-fry for another 5 minutes until the rice is uniformly colored, well combined with the seasonings, and heated through.

  7. 7.Serve

    Serve the hot egg fried rice immediately. It pairs well with various Chinese dishes, such as black bean sauce, sweet chili sauce, or vegetables in sweet and sour sauce.
