Beat 4 eggs in a bowl. Add 1 tablespoon of cooking oil to the beaten eggs and mix well. Pour this egg-oil mixture over the cooked rice in a large bowl. Mix thoroughly with a spoon or spatula until all rice grains are evenly coated in the egg mixture.
Warm up a pan or wok and add 2 tablespoons of cooking oil. Add the chopped spring onion and stir-fry for until it becomes fragrant.
Add the egg-coated rice into the frying pan with the spring onion. Keep stirring and frying for about until the egg starts to 'pop' on the rice, indicating it's cooking and the rice is heated through and slightly .
