In a large wooden bowl, add 2 cups of wheat flour. Gradually add approximately 1 cup of water while mixing and kneading the flour until a rough dough forms.
Pour 1-2 tablespoons of olive oil into the dough. Continue kneading the dough for several minutes until it becomes smooth, soft, and elastic. The dough should be ready when it forms a cohesive ball.
Transfer the kneaded dough onto a clean surface or a silicone mat. Roll the dough into a log shape and then use a dough cutter or knife to divide it into 6-8 equal portions.
Take one portion of dough, roll it into a smooth ball, and dust it lightly with wheat flour. Using a rolling pin, roll out the dough into a thin, even circle, about 6-7 inches in diameter. Repeat for the remaining dough portions.
Light a gas stove and place a tawa (flat griddle) over medium heat. Allow the tawa to heat up for about 1-2 minutes until it's hot.
Place one rolled-out roti onto the hot tawa. Cook for about 30 seconds until small bubbles appear on the surface. Flip the roti and cook for another 30 seconds. Flip it again. The roti should start to puff up. Gently press the edges of the roti with a clean kitchen cloth to help it puff up evenly and cook thoroughly on both sides, until golden brown spots appear.
Once the roti is fully puffed and cooked, remove it from the tawa. Repeat the cooking process for all remaining rotis. Stack the cooked rotis and apply a small amount of butter on each while they are still warm.
To assemble a wrap, place a cooked roti on a plate. Layer with shredded lettuce, sliced tomatoes, cucumbers, and onions. Add 3-4 pieces of fried chicken or paneer. Drizzle with ketchup to taste. Fold the roti to create a wrap and enjoy immediately.
